Good Morning everybody!
Alright my fellow Vancourverites, let’s just ignore the fact that it is the most gloomy Monday of all time here in Vancouver today, and try to focus on the positive! Contrary to the fact that it is pouring down rain and utterly miserable outside today, for the most part I think we have to admit that Spring has definitely arrived here in Vancouver! I mean let’s face it, our trees have leaves on them, our cherry blossom trees have been blooming like mad, grass is getting green, and it’s gotten to the point where you can actually step outside and be greeted by that amazingly fresh, floral scent that I can only describe as the amazing scent of Spring. All things considered it has been wonderful so far this Spring, so I will try my best to ignore this very rainy and depressing day… and I will hope that the weather forecast for the remainder of the week brightens up to include at least a little sunshine! Pleassseeeeeeeeee!!!
Anyways, with summer just around the corner (sort of) I seem to have one thing, and one thing only on my mind – baking with lemons! Ahhh yes – it is that time of year when the sun comes out, the weather starts to get warmer and I start to experience intense cravings for the sweet and tangy delights of all things lemon infused! There is just something so fresh and crisp about lemon desserts that make for a perfect finish to those simple and light spring / summer meals, wouldn’t you agree?

Hooray we have made it half way through the work week! I think we all deserve a big pat on the back and possibly a little something sweet… who’s with me???
Okay, so if this is your first time visiting this site, you won’t know this about me yet… but I am pretty much obsessed with dates… (the fruit that is.) Now for tor those of you who are returning readers, although I have never actually specifically addressed this obsession, you have most likely already guessed this about me, seeing as how I tend to use dates in a lot of my baking. Doesn’t matter if they are fresh dates or dried dates, I can’t seem to get enough of them!
In the past I have been keeping this obsession kind of on the down-low because for some reason when you tell people that you like dates, they tend to look at you like you are the strangest person on earth and like they think you must be a grandmother in disguise. But I say enough with the hiding! I’m not ashamed to admit it anymore – I LOVE dates. They are delicious, and if you think otherwise or worse, if you haven’t ever tried a date…. you need to hustle to the grocery store right now and pick some up because once you have a taste and unlock the hidden potential of this chewy little fruit. Trust me – once you give them a try, you will be just as excited as I am.
Dates make for the most amazing, and unique addition to almost any baked good! Not only do I use them as a natural sweetener in almost all of my homemade granola & granola bar recipe’s, but I also love to throw them into muffins, scones, loaves, cookies… oh who am I kidding I love to put them in everything!
Good morning fellow early birds & scone lovers!
It is an absolutely stunning Monday morning here in Vancouver, so even though it is a Monday morning and thus a little bit depressing that I have to go into work today, I can’t help but be more chipper than my usual Monday morning self all thanks to this gorgeous sunshine! Now I don’t know what it is about these sunny Vancouver mornings, but they always put me in a scone baking mood! Well if I’m being honest, I am pretty much always in a scone baking mood – because if there is one thing I know for sure about myself, it is that I am an absolute scone-aholic.
Not only do I love to bake cornucopias amounts of scones to test out new flavour combinations, but once a batch of fresh scones comes out of my oven… stopping at just one scone is literally impossible for me. Seriously – how do you eat just one scone? As far as I’m concerned, if you can stop after eating just one delicious, flaky, buttery homemade scone… you have super-human powers and deserve to be awarded a medal of honour for the person with the most self control when it comes to scone consumption. This would be a very prestigious award would you agree?

So it’s official – I have totally broken my 2015 New Years resolution… which was to post to this blog at least once a week. But hey, It’s basically mid April so that means I kept up with my resolution for three and a half whole months, which is essentially a quarter of the year and I think that I deserve some credit for that right??? Okay, so maybe I don’t deserve credit of any kind, but I’m just trying not to dwell on the fact that I have to add yet another thing to my list of failed New Years resolution attempts. But alright, alright, in the interest of owning my up to my shortcomings, i’ll just admit it – I failed …(insert defeated sigh here :P)
Now I’m not trying to make excuses for myself, because I am a big believer in the “no excuses” policy right now, but what can I say, these last two weeks have been a little bit of a whirlwind for me and as a result I totally let myself get behind in my posts… Blaaah!!! But hey – I am here now, so I say enough with the dwelling on the bad and let’s move on to celebrating the good – agreed?! Agreed.
