How many of you out there, who like me, are of the opinion that a day isn’t complete unless it ends with a little bit of dessert? I don’t know about you, but I can’t seem to help myself when it comes to my dessert cravings after I have finished my dinner. It doesn’t have to be a fancy dessert – just that little something sweet to satisfy my need for sugar before the day is through.
Like I said before, my desserts do not need to be fancy – In fact, most nights I am perfectly content with calling a bowl of freshly sliced strawberries or a spoonful of chocolate almond butter my dessert for the evening. However, there are definitely days when I crave something a little bit more decadent for my weeknight dessert. My cravings for something a little bit more complex in the dessert department usually come at the end of a very long work day or as was the case yesterday… at the end of a very longgggg Monday. Yes, Mondays – I think you know what I mean…
So after Cole and I had finished eating a very healthy dinner of grilled chicken breast with broccoli & kale salads, I felt like we were extremely deserving of a delicious dessert to reward our healthy couple behaviour :p So while Cole was out in the garage working on his truck and various other man tasks, I was scanning through my pantry and fridge for some inspiration for the perfect surprise weeknight dessert for two.
Because I hadn’t exactly followed through on my plans to go grocery shopping over the weekend my ingredient stock was a little low. I was fresh out of eggs and the only ingredients I had (besides dijon mustard and lots of carrots) was about 1/4 cup of butter and a few blueberries from a previous baking endevour. My first thought – I can work with this 😀 Immediately my mind got stuck on the idea of a fresh, warm blueberry crumble for Cole and I to share with a scoop of vanilla ice cream while sitting on the couch watching Lost on Netflix (because we are currently obsessed with that show.)
Morning everybody! So I am officially the giddiest girl on earth right now for three reasons:
Reason number 1. Last weekend was a long weekend. I am so happy that I came in to work this morning with it feeling like a Monday when it is already Tuesday—only 4 more days until next weekend. Wahoo!
Reason number 2. Not only was the weather gorgeous over the long weekend, but it is supposed to continue to be gorgeously sunny, with temperatures reported to be in the high twenties for the rest of the week. Honestly, it’s amazing how a little sunshine can boost my mood.
Reason number 3. This past Saturday we had our grand opening at the Haney Farmers Market and it went so well that I have been riding on the residual high from the success for the last 3 days.
It was a wonderful experience, and I have been dying to tell you all about it…Read More
Happy Mother’s Day to all of your beautiful, wonderful, hard working and just down right amazing mummies out there! Okay, so I know this post is coming in a little late, but this is a very special post for me to make so I figured better late than never right???
I hope you all had the most amazing Mother’s Day ever and that you were pampered to no end because let’s just get right down to it… you deserve it! I am of the opinion that Mother’s more than anybody need to be pampered on this one day a year, because seriously, where would all of us be without the love, support and guidance of our amazing mummies?
So it was recently brought to my attention that we are now in the month of May, and as such it is time for us to start focusing on a little thing that we women dread hearing about – that’s right, I am talking about beach body season (insert eye roll and exasperated sigh here.) Mhmmm, beach body season… aka the bane of my existence.
This is the time of year where my serious neglect of ab work during my winter work out routine comes back to bite me in the ass! Not to mention I took full advantage of the fact that thick oversized sweaters were totally in this year to hide my mid section all winter long, and subsequently I may have been a little (a lot) extra lenient when it came to my abdominal situation this year… can anybody else relate to this oversized sweater fashion induced extra tummy weight??? If you answered yes to this question, first I give you a virtual high five – high ya! – we are in this together! And second, below is a recipe for the perfect healthy, yet totally delicious snack, to help you kick start your 2015 beach body diet! We got this!
So because I am a self aware, peanut butter addict and I can’t get through a day without a peanut butter fix in some shape or form, I decided that the best thing for me to do to get my but in gear for bikini season would be to create a healthier way to enjoy peanut butter- that is, as opposed to just spooning it straight from the jar 😀 Thus, the recipe for this peanut butter granola was born!
