Hi fellow Fall & pumpkin spice lovers!

I’m assuming this is what you are, because there is nothing that screams fall more to me than baking with pumpkin and spices – so I can only assume that you have been drawn to this recipe post because you share my love for all things pumpkin spice; Thus you were intrigued by the Pumpkin Spice Latte Scones title …   {So that was the longest sentence ever}  But am I right on this one? Are we fellow pumpkin spice lover buddies ?!?  Yipee!  Let’s continue on this pumpkin spice loving journey together then 😀

Just in case my enthusiasm for pumpkin spice above didn’t tip you off – I have to admit that I have officially come down with a case of Fall fever. This is pretty much the case every year when September rolls around, and this year is clearly no exception. I’ve already hun hung out our fall wreath, planted colourful orange and red mums  in our garden out front, busted out alll the fall decor in our house so its pretty much looking like some sort of combination between an apple orchard and a pumpkin patch in our house as of now and I LOVE it. I feel like Cole’s enthusiasm for the fall decor may not be quite as strong { / non-existent}, but I do think he enjoys watching we run rampant through the house decorating it like a five year old.

Whole Wheat Cinnamon Raisin Soda Bread

I can’t believe we are just two days away from the official first day of fall! Even though it seems like summer only just began, I can’t help but feel giddy about the change in seasons, so even though it is not technically fall yet, I have completely gone into fall mode.  I have put away all of my summer shorts and t-shirts and welcomed dark wash jeans and chunky sweaters back into my daily wardrobe; Cole and I busted out all of our Fall decor and began decorating the house with rich earthy oranges, reds and yellows to welcome the season; and of course, lest I forget to tell you that I have been baking up all kinds of fall inspired goodies that embody all of the warm spices and seasonal flavours that I love so much about fall.

I just love fall inspired baking and I think most of us can agree that when we think about fall baking, some of the first things that come to mind are baked goodies that  pair together fragrant spices like cinnamon, nutmeg, and ginger with seasonal fruits and vegetables like apples, pears and pumpkin. There is just something about the fall season that screams for these flavours, and I am soooo happy to oblige.

Any baked goodies that are laced with cinnamon are probably my favourite things to not only bake but more importantly to gobble up. Yup – anything that is chock full of this incredible spice is pretty much guaranteed to be delicious in my books, so I have wasted no time getting into the fall baking spirit by using cinnamon with reckless abandon this year. I have already had to make a couple emergency trips to the grocery store to replenish my stock of cinnamon at home – no joke – that’s how much I have been baking with it. Feel free to call me the crazy cinnamon lady… I don’t mind.

Hi everybody!

Alright, so Cole and I just got back from a week long vacation up in Kelowna, and although it was a much needed little getaway, ever since we got back I have been so busy between running around at work like a crazy woman, (trying to catch up on the hundreds of emails in my inbox… seriously???) and just plain trying to get back into the swing of things at home that I have been completely neglecting my posts – Ahh!

It has been driving me crazy because I haven’t had nearly enough time as I would like to be baking up delicious treats for us to feast on. Baking is seriously my stress reliever, and when I can’t even make the time to do that for myself… Let’s just say I go a little batty and perhaps get a little cranky due to the extreme symptoms of what I have not-so-cleverly named “baking withdrawal.” Now before you get too worried about my (completely made up) condition, I think I have finally gotten myself settled back into the rhythm of regular life (vs vacation life) again. So, the bright side to this story is that in the coming weeks I should be able to start pumping out recipe posts again like nobodies business! Yipee!!

Now because I have been running around like a mad woman for the past two weeks and dramatically claiming that my schedule is just “too busy,” I thought for my first post in a while it would be a good idea to share a super simple recipe that not only tastes amazing, but can also be easily thrown together, even when you are on a tight schedule which let’s be real – who isn’t these days?Read More

Saturday Mornings with Whole Wheat Maple Bacon & Apple Biscuits

Morning friends – I hope you all had lovely weekends <3

This weekend was a bit of a lazy one for Cole and I, but I’m not ashamed to admit it. Sometimes, I just love a good lazy Saturday – don’t you? You know, the kind of Saturday where you spend most of your day either at home, or putting around town with no agenda, and generally accomplishing nothing in particular? These are my kind of Saturdays. There is just something so satisfying about waking up naturally – {as opposed to the sound of a beeping alarm} – even if you are like me and still manage to wake up before 7am on Saturdays without fail, despite the fact that you know you are allowed to sleep in. {Yes, I actually do this every Saturday – what can I say? I’m a morning person}.

Even though I love these lazy Saturdays now, the idea of it is actually something of a new concept for me. Up until about a year ago  I would always schedule my Saturdays kind of like how I schedule my work days – completely structured down to the last detail. Is this strange? I am a planner, so it was always just natural for me to create a to-do list for my Saturdays. I would fill it up with the kind of errands that “need to get done”, but you don’t ever have time to do during the week. So inevitably, I would always find myself stressing out on Saturdays unnecessarily over the tasks that I just had to get done. I think you can guess where this is going… because my lists were always unrealistically long, I was usually unable to actually get everything done. – So I would stress all day about having a failure of a day off just because I couldn’t check off all the things on my list. Do you ever do this? It sounds so silly I know, but for the longest time I just couldn’t help myself.

Maple Cream Cheese, Bacon & Caramelized Apple Flat Bread

Weeknights have the tendency to become a little hairy for Cole and I. Between working full-time, preparing for our weekly Saturday Farmers Markets, up-keeping the house, taking care of our new kitty, {and just life in general}, we are finding that we don’t really have much time to dedicate to sitting down for a nice relaxing dinner …. or you know just feeding ourselves dinner at all. Most evenings I am so engrossed in market preparation I just ignore dinner because I don’t want to mess with my baking momentum. So by the time I actually finish all my baking business it’s somehow already 8pm and I just can’t bring myself to dirty up any  more dishes to make a nice meal for Cole and I.

So as a result, pretty much all summer long our dinners have consisted of BBQ’d chicken and salads, which I know this is a super healthy dinner – and I am not one to complain about a delicious salad for dinner – but I do feel a tid bit of guilt for not finding the time to jazz up our dinner routine lately for Cole’s sake. Although he would never ever complain about a meal that is put in front of him, {because he is pretty much the most easy going human being on the planet when it comes to food}, but I do love to feed him up with fun new creations that I dream up in the kitchen. So the fact that we have had over 3 months without any kind of new excitement on our dinner plates is a little disheartening to me.

Apple Spice Porridge Mix

I think most people will admit to having a favourite season – do you have a favourite season? Fall is my favourite – So as the summer winds down, temperatures start to cool, and the leaves start to turn here in Vancouver, in combination with the anticipation of apple/pear season and the coming of allllll the new fall fashions – I  personally can’t help but welcome the season with open arms.

Some people think I’m totally batty for dreaming about fall, when it seems to them like summer has just begun, but I can’t help it. I have always been a lover of all things related to fall and once the end of August rolls around, I am usually ready for the change of seasons, and start experiencing intense cravings of all things related to apple and pumpkin spice. {Is anybody else just counting down the days until Pumpkin Spice Lattes make their triumphant return to Starbucks??? <3<3<3 }

There is no one specific reason for why I love Fall so much- {okay so maybe I could chock my obsession with the season up to Pumpkin Spice Latte’s as the one reason} – but I would like to think that my love for fall comes from a combination of so many little things.
