Rhubarb-Banana Crumble

IMG_2024

Happy Monday lovelies!

So this morning as I reached into the refrigerator for some cream to add to my much needed coffee, I couldn’t help but be enamored by the presence of a gorgeous bundle of bright pink rhubarb I picked up at the farmers market over the weekend. It looked so beautiful all bundled in it’s bow-tied string, that I honestly wanted to cradle it in my arms an cherish it for always…. is that strange? Don’t answer that.

Seriously though, can rhubarb season just please never end???? I don’t know about you but I just love that gorgeous pink stuff. It’s one of my all-time favourite ingredients to bake with because it is so versatile and pretty much tastes amazing with anything and everything. Every year I try it out with different fruit combinations and I always find myself falling in love with the new flavour combo’s.

Such was the case when I stumbled upon a recipe in one of my favourite Canadian Living cookbooks for Rhubarb-Banana Crumble. Say whatttt????? Now I must be straight up crazy, because until I saw that Canadian Living recipe, I had never even thought to pair together rhubarb and banana; But as soon as I thought about it, I was like uhmmm duh!!  So after putting my own spin on the recipe and subsequently tasting {a lottt} the result… I have to be honest with you guys and say this is hands down my favourite rhubarb dessert of the season.

IMG_2958

Why hello lovelies! Long time no post eh!? Gah – I am seriously the worst blogger ever! I am so sorry for being so AWOL lately. I have just been taking a lot of my free time to get prepared for the Farmers Market Season, which started this past weekend. But hopefully now that the craziness of the first weekend is over I’m hoping to get back into rhythm of things.

Anyways today is an exciting day because I’m sharing the recipe for these White Chocolate Raspberry Cheesecake Greek Yogurt Pops on the Tastes of Lizzy T website!  You are going to love this recipe and it’s the perfect way to kick off the summer!

Okay, so I think I might be welcoming in the coming of summer a little bit early here with a popsicle recipe, but what can I say? I just couldn’t help myself, because the weather in my Vancouver hood the past couple of weeks has been so uncharacteristically gorgeous! We have had sunny days, with crazy-town hot temperatures, and in the land of perpetual rain, that is basically unheard of for the time of year –  and I am absolutely loving it!

This past weekend temperatures soared and we were all scrambling to find a way to beat the unexpected heat. In other words, we were in serious need of some kind of delicious, freezing cold treats to aid our current situation.

Spring is in the air, temperatures are rising, and the sun is shining. It’s ice cream season!

Happy Tuesday lovelies! I am so excited to be partnering up with Best Friends for Frosting to share this super simple recipe for my Banoffee Pie Granola Bars with you today!

Not only do these granola bars make for an amazingly delicious breakfast or snack, but they also double as a super yummy dessert. Basically it’s like getting three meal options for the price of one – and what could be better than that ?!

This is a nice big recipe so you can easily serve up a couple slices for breakfast, pack a few leftovers along with you for an afternoon snack, and still have some leftover to reheat and serve warm with a scoop of vanilla ice cream for dessert. Mhmmmmm

But how do they taste you ask? Well to put it simply, they taste just how they sound… like a banoffee pie; Honestly, need I say more? The flavor of the caramelized banana combined with the toasty oats and the nutty pecans… It’s simply irresistible. If you are a banoffee pie fan, you are going to absolutely love these granola bars. So head on over to Best Friends for Frosting to get the recipe for these via this link here !

Mocha Brownie Sandwich Cookies

Lately it seems like I find myself facing very serious baking dilemmas on an increasingly regular basis. Do you ever have this problem? Baking dilemma problems?

Now by baking dilemmas, I don’t mean the question of “to bake, or not to bake?” – because let’s be honest, when faced with that question, I will always very emphatically choose “to bake!”

No, no for me, my baking dilemmas are more a consequence of my ridiculously indecisive nature, which usually makes it near impossible for me to decide exactly what it is that I actually want to bake in a given day – or more importantly, what I want to eat.

Typically my baking dilemmas go a little something like this… “should I bake cupcakes or a layer cake?”; “vanilla or chocolate?”; “pie or cobbler?” “scones or muffins?” … you get the idea.

Recently during one of my episodes of said baking dilemmas, I was debating whether I should make cookies or brownies – and having a seriously hard time. I mean can you blame me? Honestly, sometimes it’s just pure torture trying to decide between two options that are each so delicious.

Then suddenly it hit me, that there was no good reason for me to have to choose – so I didn’t and the result; These Mocha Brownie Sandwich Cookies… Best. Decision. Ever.

Butterscotch Stuffed Brown Butter Skillet Cookie

IMG_9460

I don’t know about you, but when I take a tray of fresh cookies out of the oven, I can usually only wait all of about five seconds before feeling an uncontrollable need to eat one immediately.

Some might say I have absolutely no self control, {and that’s definitely part of it}, but I prefer to think of it as just having good sense. Because I mean honestly, there really is nothing quite like warm homemade cookies, that are still ooey, gooey, fresh from the oven. Are we on the same page here….?

Alright then you’re going to love this recipe just as much as I do, because essentially it’s a giant cookie that you can eat straight out of the pan, while it’s still hot from the oven…. aka the best damn thing ever. Oh and did I mention that its a cookie that is made with brown butter…? So yeah, it really is just the bees knees 😀

I’m so excited to be partnering up with Best Friends for Frosting to share the recipe for this Butterscotch Stuffed Brown Butter Skillet Cookie! So if you are about ready to lick your computer screen like I am, pop on over to their website via this link here and get the recipe!
