Hospitality; Friendship; Exploration; and Humanity. Did you know that this is the meaning behind the Pineapple?
Pineapple has always been my absolute favourite fruit – mainly because of it’s sweet, juicy flavour and it’s fun, spiky husk; And now that I know the meaning behind this delicious fruit, I can’t help but love it even more.
Over the past couple weeks I have been on a quest; a Doughnut quest if you will…
I have been whipping up enough doughnuts to feed a small army, all in an effort to make the softest, fluffiest homemade yeast doughnuts possible, and I think I have finally done it. So all my fellow doughnut lovers unite for this recipe, because it is a winner!
It’s cherry season!!! Who else is just wayyyy too excited about this? Has anybody had the chance to go cherry picking yet? I haven’t yet, but I have been grabbing fresh local cherries from the market every time I see them. I just can’t get enough.
There is something so special about the simplicity of a basic sugar cookie. Do you know what I mean? I often find myself fantasizing about their chewy centers, crisp edges, and crackly tops…
Such was the case this morning when I had a sudden hankering for a good sugar cookie – but not just any sugar cookie; One that is loaded with chocolate and packing a necessary dose of caffeine for a Wednesday morning. Such is the story of how these Chocolate Espresso Cookies were born. It’s a bit of a boring story, but that’s okay becayse these cookies are anything but boring.
Soooo this happened… I don’t really know how it happened… but it happened, and I am definitely not sorry.
At first, I was just planning on posting this No Churn Strawberry Ice Cream for you guys… but then I made a batch of double chocolate muffins (because it was the middle of the week and I needed chocolate), and just as I was about to stuff my face with a muffin, I had a thought… warmChocolate Muffin + melty Strawberry Ice Cream? I’m a big fan of easy breakfasts; And when I say easy breakfasts, I mean the kind that can be prepped ahead of time and require little to no preparation on the morning of. Are we on the same page here?
On the weekends I will batch prepare things like overnight oats & homemade granola, so that I have them on hand, for quick and easy weekday breakfasts. It just makes life so much easier on busy weekday mornings.
And with all of the local summer berries in full swing here in Vancouver, I have been taking every chance I get to enjoy them; morning, noon and night. So these easy Mixed Berry Yogurt Tarts with Almond Oat Crust have become my go-to breakfast this summer.
There are so many things I love about Summer; sunshine; blue skies; beach days; warm breezes; picnics; campfires; s’mores… the list goes on and on. But if I had to choose my favourite thing about Summer, I would have to say that fresh local berries and stone fruits steal my heart every time.
Last weekend Cole and I went berry picking and came home with buckets of ripe strawberries, sweet raspberries and juicy blueberries. I am up to my ears in fresh local berries right now and absolutely loving every minute of it.
