Maple Pecan Almond Granola

Happy Friday lovelies!

My goodness it feels like it’s been a while since I sat down here and shared something new with you guys, so I am so happy to finally be doing this! We’re in for a bit of a rainy weekend here in Vancouver so I have some pretty big plans to finally share ta new recipe with your guys. After I’m through here, my kitchen will probably turn into something of a baking factory – as it often does on weekends when I have a bit of free time.

Fall is in full swing over here in Vancouver, so it’s safe to say I’m officially craving warm, comforting flavors & hearty snacks to get me through the chilly days. I always keep this Maple Pecan Granola stocked in our pantry at this time of year because one of Cole and I’s favourite things to snack on throughout the day is granola – and this granola is chock full of pecans, almonds, oats and maple goodness. So basically it’s downright irresistible to us.

Valentines Day: Let’s Stay In… with a Double Chocolate Hot Fudge Stuffed Skillet Cookie for Two

Happy Valentines Day Eve lovelies!

Confession;  Cole and I kinda, sorta, don’t celebrate Valentines Day…

Okay I guess I should be a little more specific. When I say we don’t celebrate Valentines Day, I mean we don’t celebrate Valentines Day in the traditional sense. So we don’t buy each other gifts, we don’t go out for dinner, Cole doesn’t send singing men with flowers & chocolates to my place of work, we don’t write each other Valentines Day cards…. you get the gist.

You’re probably thinking we’re some kind of no fun, un-romantic, Valentines Day Grinch couple right? {eeeeps please don’t judge too harshly} I promise we aren’t Valentines Day haters!

It’s just that Cole and I have never really been allthat excited by all of the traditional Valentines Day festivities. Now at the risk of offending all of you readers who are die hard Valentines Day lovers, just hear me out as to why we like to do Valentines Day a little differently….

We’re Engaged!

IMG_7255Happy Tuesday lovelies! I hope everybody’s week is off to a good start <3

So just in case you missed out on my Instagram posts… Cole & I are engaged! We’ve actually been engaged since December, and I am just getting around to this post now, so please don’t judge me for being SO. INCREDIBLY. SLOW. I’m the worst – I know it.

Seriously though, I can’t believe it but it has already been a whole month since Cole and I got engaged. I just can’t believe how quickly the time has flown by.

If I’m being completely honest, I was a little nervous to write this post. Basically I have been debating for the last month whether or not you guys would care to read about our engagement story {hence the ridiculously late post}. In the end I decided I would just do it, because at the end of the day I really wanted to share it with you guys. So I hope you enjoy our story… <3

Saturday Mornings with Whole Wheat Maple Bacon & Apple Biscuits

Morning friends – I hope you all had lovely weekends <3

This weekend was a bit of a lazy one for Cole and I, but I’m not ashamed to admit it. Sometimes, I just love a good lazy Saturday – don’t you? You know, the kind of Saturday where you spend most of your day either at home, or putting around town with no agenda, and generally accomplishing nothing in particular? These are my kind of Saturdays. There is just something so satisfying about waking up naturally – {as opposed to the sound of a beeping alarm} – even if you are like me and still manage to wake up before 7am on Saturdays without fail, despite the fact that you know you are allowed to sleep in. {Yes, I actually do this every Saturday – what can I say? I’m a morning person}.

Even though I love these lazy Saturdays now, the idea of it is actually something of a new concept for me. Up until about a year ago  I would always schedule my Saturdays kind of like how I schedule my work days – completely structured down to the last detail. Is this strange? I am a planner, so it was always just natural for me to create a to-do list for my Saturdays. I would fill it up with the kind of errands that “need to get done”, but you don’t ever have time to do during the week. So inevitably, I would always find myself stressing out on Saturdays unnecessarily over the tasks that I just had to get done. I think you can guess where this is going… because my lists were always unrealistically long, I was usually unable to actually get everything done. – So I would stress all day about having a failure of a day off just because I couldn’t check off all the things on my list. Do you ever do this? It sounds so silly I know, but for the longest time I just couldn’t help myself.

Our Incredible Kelowna Stay @ the Teehouse B&B

Hi everybody!

Okay, so who else thinks that this summer is just flying by!? I can’t believe it is already the middle of July! Gah – I don’t want it to end. Do you have any exciting holidays or perhaps a few extra longgg weekend getaways planned? Cole and I are all about the extra long weekend getaways in the summer time. It’s amazing how an extra Friday or Monday being added to your usual weekend can just make you feel like you really had a vacation. All in favour of the three-day weekend say I!

So a couple weeks back Cole and I had such an amazing little mini trip up to Kelowna for an extra longgg weekend getaway. It was amazing – we just love to visit the Okanagan, and Kelowna in particular.  I managed to get a couple decent shots of the gorgeous scenery up there which I have shared here.  But let’s face it I am no photographer so if you have never been, I really recommend you put Kelowna on your list of places to visit, because it is just so stunning.

First Haney Farmers Market!!!

Morning everybody! So I am officially the giddiest girl on earth right now for three reasons:

Reason number 1. Last weekend was a long weekend. I am so happy that I came in to work this morning with it feeling like a Monday when it is already Tuesday—only 4 more days until next weekend. Wahoo!

Reason number 2. Not only was the weather gorgeous over the long weekend, but it is supposed to continue to be gorgeously sunny, with temperatures reported to be in the high twenties for the rest of the week. Honestly, it’s amazing how a little sunshine can boost my mood.

Reason number 3. This past Saturday we had our grand opening at the Haney Farmers Market and it went so well that I have been riding on the residual high from the success for the last 3 days.

It was a wonderful experience, and I have been dying to tell you all about it…Read More

Browned Butter Oatmeal Chocolate Chip Griddle Cakes

Pancakes are special… wouldn’t you agree?

I don’t know what it is, but cooking and eating pancakes now a days always evokes this incredible feeling of happiness and makes me feel all warm and fuzzy inside. Now I don’t know if this feeling is brought on solely because of the prospect of filling up on warm, fluffy pancakes with plenty of butter and maple syrup or if it stems from the happy memories I have from my childhood pancake days… let’s just say that it is probably a little bit of both.

Growing up, my three brothers and I would gather around the table on Saturday mornings, just hoping and wishing for one thing… homemade pancakes. Although there was a lot of things we kids didn’t collectively agree on, pancakes were the one thing that we could collectively agree on for Saturday morning breakfast options. I’m sure my parents would have probably preferred to cook something a little bit more nutritionally sound for our family breakfasts but I think the simple fact that we could all quietly agree on what to have for breakfast was enough for them to whip them up without protest.

We four little munchkins would all take turns hovering around my mom and dad as they happily cooked up those round little cakes of joy! My mom would prepare the batter, while my dad was in charge of carefully pouring and flipping the pancakes to ensure that they were perfectly round and golden brown. I would help my mom by whipping the whipped cream to go on the side with our pancakes (because clearly more sugar was needed) and my brothers would take turns learning how to flip the pancakes with my dad. And then once all the pancakes were cooked, we would  all squeeze around the breakfast table that was crammed off to the side of our tiny kitchen to enjoy the fruits of our labour. I love pancakes…

St. Patrick’s Day Baked Chocolate Stout Donuts with Bailey’s Irish Cream Coffee Glaze

Happy Monday everybody!!!

Now I know what you might be thinking… “there is no such thing as a happy Monday morning…” and believe me, there are definitely Monday mornings when I would not be able to argue with that statement. However, this particular Monday morning was pretty much the most fantastic Monday morning of all time. How is that possible you ask? Well all of the credit for this spectacular Monday morning is due to these chocolatey, boozy, moist, fluffy little donuts from Irish heaven.

That’s right – this is the kind of amazingness that happens when St. Patrick’s day and donuts collide! Yup… I started this St. Patrick’s Day Monday morning off right with these little bites of heaven, (despite the fact that they are laced with stout and baileys Irish cream,)… I’m sorry is it inappropriate to have beer and liqueur for breakfast??? Well, we will just ignore the inappropriateness of this situation for the time being  it was possibly one of the best decisions I have ever made, ;P.
