Boozy Hot Chocolate Bread Pudding

It seems that for most of us, at some point in life {usually in our high school / college years} our mugs of hot chocolate inevitably get replaced with hot beverages like black coffee, americanos, and latte’s as a direct result of our struggle to stay awake during our adolescent juggling act between school, part-time jobs, studying, and struggling to keep up with friends & family. At least, such was the case for me.

But despite my intense love for glorious, wondrous,  caffeine – No matter how old I get, I never get sick of a good old fashioned mug of warm, rich, homemade hot chocolate. In fact, given the opportunity, nowadays I will gladly choose a mug of hot chocolate over a steaming cup of joe any day. Do you feel the same way?

There is just something so comforting and amazing about cradling a mug of hot chocolate, wouldn’t you agree? I think the reason why hot chocolate holds such a special place in many of our hearts is because drinking hot chocolate is associated with childhood – you know the days long before we were introduced to the many wonders of caffeine.

Whenever I make myself a mug of hot chocolate I can’t help but be reminded of  the days when my mom would head up a big pot of homemade hot chocolate for my brothers and I after a chilly fall afternoon of jumping in leaf piles or after a snowy afternoon spent throwing snowballs and building snowmen. My mom would peel us out of our cold wet clothes, throw everything in the dryer, wrap us up in warm blankets on the couch and we would wait patiently with rosy cheeks and noses while she poured us each a nice big mug of her homemade chocolate.

There really was nothing better than holding those giant warm mugs in our cold hands and gulping down that chocolatey goodness to warm us up from the inside out.  Of course, our hot chocolates were always topped off with either a healthy dollop of whipped cream or a mound of mini marshmallows, because… well what the hell would hot chocolate be without whipped cream or marshmallows???

Peanut Butter Chocolate Bar Halloween Cupcakes

Happy Halloween eve lovelies!

I hope you are all enjoying your Friday evening and that you have mega awesome plans for the Halloween weekend!

I made these cupcakes for a birthday order today and I just had to bang out this recipe post for you because they were just too darn cute not to – especially because Halloween is tomorrow and these would make the perfect Halloween dessert addition to any upcoming Halloween events you might have happening this weekend.

Cole and I will be starting off the weekend at the Farmers Market tomorrow, serving up some Halloween themed goodies and then on Sunday we have a whole lot of nothing planned. That’s right – nothing! haha. It’s supposed to be a pretty rainy Vancouver weekend, so we both agreed that we would love nothing more than to snuggle up at home with Katniss and watch creepy movies on Netflix in honour of Halloween. Not going to lie, I am pretty stoked about this 😀

So what are these spookly little cupcake beauties anyway? Well let’s just say they were inspired by a couple of my favourite Halloween treats…. Snickers, and Reeses peanut butter cups – mhhmmmm. I could eat those little bundles of chocolatey, caramely, peanut buttery joy allllll day long.

Roasted Yam & Spice Cupcakes with Cream Cheese Frosting

Happy Friday everybody! And for all you Canadians out there – happy beginning to the Thanksgiving long weekend <3

I just love Thanksgiving don’t you? Not only because of what the holiday itself stands for, but also because I always feel like it marks the true start of the family holiday season. The time that we all really focus on spending time with family and enjoying the simple things in life that matter the most. Like going to the pumpkin patch on a Saturday to embrace the kid inside us all, while picking up a wagons worth of all different shapes and sizes of adorable pumpkins; or the beauty of cuddling up on the couch on a rainy afternoon to watch old movies; or just sharing in the beauty of the vibrant fall colours outside by going for long walks in the crisp fall air with someone that we love.

There are so many things to love about the fall season and I could go on and on about this for days – but the gist of my ramblings is that for me Thanksgiving has always been that marker to the true beginning of this wonderful season. My mom and I have always shared in the love for this season, so I think this why we often tend to get a little carried away when it comes to our family Thanksgiving dinners ever year. As in we act like we are cooking for a guest list of about 50 people when in reality it is usually only about 10 of us gathered around my parents dining room table.

We always end up seriously over cooking and end up having left overs that will last us a week. I mean It’s so hard not to when there are so many amazing harvest inspired dishes to gobble up – honestly can you blame us?  Besides, I’m not one to complain about Thanksgiving leftovers – no sirree…

Fresh Peach Cupcakes

Morning lovelies!

First things first, I must apologize for the delay in between posts – gah! I have no real excuse except to say that it has been a crazy busy few weeks – but really, who isn’t busy right? I told you – I have no good excuses…. I fell behind – it was stupid… please forgive me 🙂

So last weekend I bought some local peaches from the Haney Farmers Market and they have got to be the best peaches I have ever had in my life. They were all so, so juicy, and just ripe with peachy deliciousness. When I cut into the first one and had a taste,  just to make sure they were good ;p} It was so dang delish I just wanted to eat the entire box.

Unfortunately I had plans for these peaches and I couldn’t just up and eat them until I was sure I had enough for leftover snacking. Sadly- I had no such luck and I ended up using all of the peaches I bought to fulfill a cupcake order. So basically the number one plan for this Saturday is to make a B-line for the farmers market fruit booth so that I can buy up as much as possible, chop em’ up and freeze them to use throughout the year when we are devoid of fresh peaches.

So I have a sweet and simple post for you all today with these Peach Cupcakes that I made for a custom order on the weekend that I really wanted to share with you before peach season bids us adieu – speaking of which, can you believe it’s almost the end of summer…. ? It’s crazy, I can’t believe we are almost in September!

Tropical Carrot Cupcakes & Cream Cheese Frosting

Hey peeps!

Alright so here’s the scoop – It’s the first Wednesday that I’m back to work after a week long vacation with Cole touring around the beautiful state of Oregon. It was such an amazing vacation and let’s say that I am feeling a little less than enthused about the return to work. I need a little mid-week pick me up to get me through this week, so here’s my thought; I think we should just have a little discussion about cream cheese today.

I feel like this is a topic that we can all relate to; because A. cream cheese has a serious comfort factor when you are feeling a little bit blue; and B. I mean really – who out there doesn’t love cream cheese? Do you like cream cheese? I’m guessing so, since you have continued to read this post past the first paragraph – so let’s discuss this more…

I love cream cheese; and when I say I love cream cheese,  I mean I really, really love cream cheese –  as in basically I will eat just about anything that has a healthy amount of that creamy goodness slathered on top. That’s right… I said anyyyything… See? I told you I love the stuff. I think cream cheese is pretty much good on/with everything – do you agree? I feel like you can never go wrong by adding a little cream cheese to your life – it can do no wrong.

Are we still in agreement on this subject? I hoped so – I’m happy we share this cream cheese loving bond.  I was starting to think I was the only person in the world with such a fondness for cream cheese, what with all the sideways glances I have gotten in the past from people when they catch a glimpse of me enjoying some of my unique, (albeit slightly strange,) cream cheese pairings.

Fresh Blackberry Cornbread

Morning peeps!

Guess what? It’s Thursday and that can only mean one thing…. it means that tomorrow is Friday and I think that deserves a hell yeah! Can I get a woop woop?!

Clearly I am a little (a lot) excited for the weekend, which isn’t exactly a new experience – I am always excited for the weekend. But this weekend I am extra excited  – mostly because this Saturday we are headed out to Delta to check out the the Deja Vu Vintage Market, which in other words is basically my heaven. I love vintage markets and will definitely be looking to Cole for restraint so as to not let me purchase literally everything I come across that is vintage & kitchen related.

Not to mention after the vintage market we will be heading for Vancouver to have a little browse around the West Elm stores & Pottery Barn… So basically we are just doing a shopping day for ALL THE THINGS that are house & home furniture related. My favourite kind of Saturday 😀 What kind of fun things are you getting up to this weekend?

Nothin’ but Strawberry Layer Cake

I don’t know how it happened, but somehow we have already come to the end of strawberry season (insert distressed emoji here.) 

Seriously how can this be!? It seems like it was just yesterday that fresh, local strawberries were showing up to the Farmers Market in glorious abundance and just a few weeks later our local strawberries are increasingly hard to find. My heart breaks…

Last week, I received a special request from the lovely Jamie asking me to bake her mom a strawberry cake for her birthday on July 2. Of course I was delighted to oblige, but because I am something of a procrastinator, it seems that I waited much too long to buy fresh strawberries to make this cake. So the night before her birthday I found myself running around town like a little tornado, seriously struggling to find a local source that wasn’t completely sold out of their stock these delicious little berries.

Apple Spice – Pecan Coffee Cake

So after two weeks of uninterrupted gorgeous sunshine and uncharacteristically high temperatures in Vancouver, it got a little bit gloomy again here for a few days and I couldn’t seem to help but crave hot coffee and comforting baked goods to help me mourn the loss of the sun. Alright so I may have been being a tad over-dramatic about the weather, but what can I say… I got used to the sunshine. So to sooth myself, I decided it was time for some good old fashion comfort food baking.

Since I couldn’t seem to stop drinking warm beverages, I decided that I wanted something that would pair nicely with my morning coffee and perhaps an afternoon latte – yes, I drink too much caffeine... let’s just not make a thing of it right now. So when I began to look around my pantry for a some flavour inspiration, the Okanagan apples that I had just bought at the farmers market the other day immediately caught my eye. What about an apple spice cake?  I asked myself and since at the time I really didn’t have a nailed down perfect recipe for the perfect apple spice cake I decided this was exactly  what my baking mission for the day would be… coming up with a killer apple spice cake recipe.

Coffee & Walnut Loaf with Coffee & Cream Cheese Icing

Don’t you just love it when you dream up a recipe for something in your head, and then when you put the recipe to the test, it actually turns out exactly how you had envisioned it would on the first try? I personally get positively giddy when this happens in my kitchen, and lucky for me such was the case with these amazing Coffee & Walnut Mini Loaves!

As usual I awoke with a craving for a yummy latte made from my new Starbucks Verisimo machine <3 <3 – (for now let’s won’t discuss my new found extreme love this machine and subsequently my new found caffeine addiction.) But of course for me just a delicious caffeinated beverage is never quite enough, because according to me no morning is complete without a little helping of something sweet 😀

So as I often do, I savoured a few extra minutes in bed while dreaming up recipes that I could bake up in a flash and pair alongside my morning latte fix. Since I haven’t made a good loaf in quite some time, I thought I would try and think up something that would be good in loaf form. It didn’t take long for the idea of these amazing little Walnut Loaves that are infused with the wonderful flavours of what else but freshly brewed espresso to pop into my head… because you know a morning latte isn’t quite enough caffeine for this little one 😛 No Siree!

So I got out my mixing bowl, threw together this batter in under ten minutes – that’s right, under 10 minutes – and popped the mini loaves in the oven to bake for about 30 minutes while I took a shower and got ready for the day. When I stepped out from my bathroom, I was immediately hit with the aromas from the toasted walnuts and the fresh espresso baking together with the cakes into a heavenly bliss.
