I strongly believe that life is just better with chocolate cake…
Even if you are having on of those hellish days that doesn’t even seem like it could be real; I firmly believe that a good chocolate cake has the power to turn even the worst of days around. Because at the end of the day, there really is nothing like slicing into a moist chocolate cake en-robed in silky, fudgey frosting.
You guys… these Pecan Clusters have been a looonnngggg time coming.
I swear I have been wanting to try and make a homemade version of these bad boys for the past two months. I bought all of the ingredients, I wrote out a practice recipe, and yet they still somehow didn’t happen until just yesterday. Every Monday for the past 8 weeks I would tell myself… “this will be the week I make the pecan clusters…” and then week after week I would amaze myself with my skills in procrastination.
Correct me if I’m wrong, but I feel like your weekend needs brownies, cozzz like brownies……
I feel like you just can’t go wrong with brownies. Whether you are baking them for a girls night in, baking them to pack along for your weekday lunches, bringing them to a fancy party or just baking a pan to keep you company on the couch while you binge watch Dawson’s Creek on Netfilx… (clearly speaking from personal experience here) – Everybody loves a good brownie, especially when you lace them with espresso, douse them in a silky hot fudge sauce that dreams are made of, and serve em’ up with a scoop of vanilla ice cream. Who’s with me?
Soooo this happened… I don’t really know how it happened… but it happened, and I am definitely not sorry.
At first, I was just planning on posting this No Churn Strawberry Ice Cream for you guys… but then I made a batch of double chocolate muffins (because it was the middle of the week and I needed chocolate), and just as I was about to stuff my face with a muffin, I had a thought… warmChocolate Muffin + melty Strawberry Ice Cream? I think you guys know we well enough now to know that I am a sucker for a cookie with a crackly top – like the very sight of crackly cookies makes me weak in the knees. So needless to say these cookies are pretty much what dreams are made of for me.
Crisp crackly edges, with a gooey, chewy, brownie-like texture on the inside; these cookies are simply too good to stop at one… or two, or three… okay you get the picture. So I basically ate a whole tray of these cookies – but they were beyond delicious so what’s the problem?
If there was one dessert I know I can always count on to please a crowd at a viewing party- it would without a doubt be homemade chocolate cream pie. There is just something truly magical about putting creamy, velvety smooth chocolate pudding into pie form & these Mini Lindt Chocolate Cream Pies are a testament to that.
Okay so I may have gotten a little carried away with the Chocolate Bark this year… and by “a little” I mean a lot. Lately it seems like I find myself facing very serious baking dilemmas on an increasingly regular basis. Do you ever have this problem? Baking dilemma problems?
Now by baking dilemmas, I don’t mean the question of “to bake, or not to bake?” – because let’s be honest, when faced with that question, I will always very emphatically choose “to bake!”
No, no for me, my baking dilemmas are more a consequence of my ridiculously indecisive nature, which usually makes it near impossible for me to decide exactly what it is that I actually want to bake in a given day – or more importantly, what I want to eat.
Typically my baking dilemmas go a little something like this… “should I bake cupcakes or a layer cake?”; “vanilla or chocolate?”; “pie or cobbler?” “scones or muffins?” … you get the idea.
Recently during one of my episodes of said baking dilemmas, I was debating whether I should make cookies or brownies – and having a seriously hard time. I mean can you blame me? Honestly, sometimes it’s just pure torture trying to decide between two options that are each so delicious.
Then suddenly it hit me, that there was no good reason for me to have to choose – so I didn’t and the result; These Mocha Brownie Sandwich Cookies… Best. Decision. Ever.
