Espresso Fudge Brownies

Correct me if I’m wrong, but I feel like your weekend needs brownies, cozzz like brownies……

I feel like you just can’t go wrong with brownies. Whether you are baking them for a girls night in, baking them to pack along for your weekday lunches,  bringing them to a fancy party or just baking a pan to keep you company on the couch while you binge watch Dawson’s Creek on Netfilx… (clearly speaking from personal experience here) – Everybody loves a good brownie, especially when you lace them with espresso, douse them in a silky hot fudge sauce that dreams are made of, and serve em’ up with a scoop of vanilla ice cream. Flourless Chocolate Hazelnut Mocha Cookies

You guys… these cookies. I die.

I think you guys know we well enough now to know that I am a sucker for a cookie with a crackly top – like the very sight of crackly cookies makes me weak in the knees. So needless to say these cookies are pretty much what dreams are made of for me.

Crisp crackly edges, with a gooey, chewy, brownie-like texture on the inside; these cookies are simply too good to stop at one… or two, or three… okay you get the picture. So I basically ate a whole tray of these cookies – but they were beyond delicious so what’s the problem?

Mocha Brownie Sandwich Cookies

Lately it seems like I find myself facing very serious baking dilemmas on an increasingly regular basis. Do you ever have this problem? Baking dilemma problems?

Now by baking dilemmas, I don’t mean the question of “to bake, or not to bake?” – because let’s be honest, when faced with that question, I will always very emphatically choose “to bake!”

No, no for me, my baking dilemmas are more a consequence of my ridiculously indecisive nature, which usually makes it near impossible for me to decide exactly what it is that I actually want to bake in a given day – or more importantly, what I want to eat.

Typically my baking dilemmas go a little something like this… “should I bake cupcakes or a layer cake?”; “vanilla or chocolate?”; “pie or cobbler?” “scones or muffins?” … you get the idea.

Recently during one of my episodes of said baking dilemmas, I was debating whether I should make cookies or brownies – and having a seriously hard time. I mean can you blame me? Honestly, sometimes it’s just pure torture trying to decide between two options that are each so delicious.

Then suddenly it hit me, that there was no good reason for me to have to choose – so I didn’t and the result; These Mocha Brownie Sandwich Cookies… Best. Decision. Ever.

Chocolate Velvet Pie

If you have spent more than roughly thirty seconds on my blog, you will know that it’s no secret that I kind of have a special relationship with chocolate. But for those of you who are just meeting me, let me just say this… I love chocolate. I literally have zero self control when it comes to chocolate. Once I have a piece, I can’t stop until I have consumed the entire chocolate supply.

And since we’re getting to know each other, I should probably tell you that I also love pie. Suffice to say, the idea of chocolate and pie coming together in a magical harmony of homemade, baked deliciousness is pretty much my idea of heaven.
