Generally I am not a person who claims to know a lot about life. In fact if you asked me for advice about any particular subject in life, I would probably tell you that I am not the best person to ask. I’m twenty-six years old and I feel like I am in a constant state of learning when it comes to the everyday ups and downs of life. I make mistakes, and my mind feels like it’s changing all the time; So for the most part I am careful about making statements about what “I know” to be true in life.
That being said, if there was one thing I think I can say that I know for sure in this life, it’s that no matter what the situation, a freshly baked muffin always makes me feel a whole lot better. Do you feel the same way? Or maybe in your case it’s not a muffin – maybe it’s a chocolate chip cookie or a buttery scone or a slice of banana bread or a bowl of pasta.
Whatever the dish may be, I truly believe that when good food is prepared with love from the heart, it has the power to make the world feel a whole lot better; Even when we are feeling our most vulnerable or defeated. Do you guys feel the same way?
How do you guys like your oatmeal muffins? Hot? Cold? Plain? Buttered?
Hands down, my favourite way to eat an oatmeal or bran muffin is warmed up, with a smear of creamy butter and a dollop of raspberry jam. I mean seriously, does it get any better than that?
Sometimes you just really need a good chocolate muffin. You know like a super moist, fudgey muffin, loaded with good quality milk and dark chocolate chunks. Are we on the same page here?
So here’s the thing these muffins are so chocolatey and delicious, that they could basically qualify as a dessert – however, because they are a “muffin” it is therefore perfectly acceptable for you to eat them for your breakfast. Ergo – you get to eat chocolate for breakfast and feel perfectly okay about it… (not that I think you ever need a legit reason to eat chocolate for breakfast).
Friends! I Keep promising you that I will be keeping up with more recipe posts & I feel like I keep letting you down!
I can’t tell you all how much I love having you request recipes when I post photos to instagram & I really want to do my best to post them quickly for you, but sometimes I really just don’t know where the time goes. But it was a rainy Vancouver day today, so we had a nice cozy day at home, giving Cole & I some much needed time to catch up on some things we have been putting off.
I have a serious soft spot in my heart for a good, classic chocolate chip muffin. Just the thought of sitting down with a warm, chocolate chip muffin and an ice cold glass of milk gets me all warm and fuzzy inside.
I guess chocolate chip muffins just have a way of bringing back happy childhood memories for me because when my brothers and I were still little, and my mom had to bring us along with her to the mall, she would always reward us with a special treat at the end of our trip if we were well behaved while she did her shopping. The kind of treat would change depending on which mall we happened to be in on a given day, but there was one mall close to home that used to have the most amazing muffin shop in the food court that she would often take us to.

Uhmm yeah, you read that correctly – I said Peanut Butter. Banana. Chocolate Chunk. Muffins… Yeah baby.
Now I know what you’re thinking… “enough said” – am I right? I mean honestly, the title says it all. If I was reading this post title on another bloggers site, they would have had me at peanut butter – no further explanation needed.
Are we on the same page about peanut butter here? For me peanut butter has never needed any kind of justification. But I guess that’s just because I am a peanut butter addict. Seriously, if a group called peanut butter addicts anonymous existed, I would be a member.
I have one word for you; Chocolate. That’s right – Chocolate. What a beautiful word that is, wouldn’t you agree? I know I have told you this before, but for the sake of this recipe post, I will tell you again; I am a chocoholic. Actually, let me rephrase that – I am a very serious chocoholic. Whenever I hear the word chocolate something stirs inside me. It doesn’t matter how focused on a given task I might be, if somebody says chocolate, I can’t help but drop whatever I’m doing to discuss a chocolate situation.Yes, my intense daily need for chocolate can definitely be classified as a very serious addiction, but I gotta say it is hard to find the negative side to being a chocoholic – because come on, it is just so darn delicious!
Personally, I think that there is absolutely nothing wrong with being a chocoholic. I mean aren’t there experts out there that are now saying that a little bit of chocolate every day is actually good for you because it can have some great health benefits for your body… people say that, right? Alright so I’m no scientist, but what I do know about chocolate is that is makes me and my tummy very happy, and if there is one thing we could all do with a little more of in our lives, I think it would be happiness. Am I right? I’m glad we are on the same page about this 😀
Suffice to say, there is not a day that goes by that I don’t indulge in a little bit of chocolate in some shape or form. Whether it be a large spoonful (or two) of chocolate almond butter, a chocolate chip cookie or just a straight up chocolate bar… in one way or another, I will have my daily dose of chocolate. A day without chocolate is like a day without water or a day without air. In short; a day without chocolate quite simply a day that is not complete in my opinion. :p So yes – I am addicted to chocolate. Does this addiction bother me? No. Can I still lead a healthy lifestyle in spite of this addiction? Absolutely! Case in point, these Double Chocolate Zucchini Muffins – Ohh yes!Read More
Good morning lovelies!
I know, I know, it’s Monday morning so good might not be the exact word you would use to describe the morning, but the sun is shining in Vancouver and that is enough to make me smile – even if it is a Monday :p
So is anybody else as stoked as I am about daylight savings? We just switched out clocks ahead this weekend and the extra hour of daylight yesterday evening and the prospect of the days to come getting longer and longer is definitely enough to keep me exceptionally excited for a good long while! Yayyyy daylight savings!!! (I have said it before and I will say it again… it really is the simple things that make me happy :D)
Hello every body!
Today I had a thought, and I realized that I don’t thank those of you who have been checking out my blog on a regular basis nearly enough, and for that I apologize! So allow me to rectify this injustice right now by saying thank you SOOOO much for stopping by today! Honestly, I am so grateful to everybody who takes the time to check out my website, read my blog posts and try out my recipes in their own homes. It truly means so much to me that you are even remotely interested in my baking escapades, so thank you so much for reading :):):) xoxoxox
And now back to the goods – and lets be honest what you really came here for… and that would be these Mini Pumpkin Spice Muffins. Is it just me or are all baked goods more desirable when they are in miniature form??? I personally think so – in fact I would go so far as to say that most things in life are more desirable when they are in miniature form… wouldn’t you agree?
