Random fun fact; I edit the Banana Bread feed over on thefeedfeed website. It’s pretty much one of my favourite things ever, because I LOVE banana bread. It’s kind of like one of those things that no matter how much I eat of it – I can never get sick of it.

I am always on the look out on Instagram for new and delicious banana bread recipes that I can add to the feed each month when I add my updates. Why am I telling you this? Good morning lovelies! So who else is so excited that Summer is finally here!? I just love summer – literally everything about it!

What are your favourite things about this gorgeous season? Here are a few of mine… Gorgeous sunshine, warm breezes, naps in the shade, aimless road trips, barefoot strolls, pink sunsets, long nights, early hikes, shorts & flip flops, sun kissed shoulders, freckled cheeks, beach days, sand castles, moonlight swims, sneaky splashes, salty hair, wet bathing suites, sandy toes, camping trips, camp fires, marshmallow roasting, s’mores making, BBQ everything, popsicle making, melting ice cream cones, farmers market wanders, & alllllll the fresh summer fruit! 

So yeah, I pretty much love everything about Summer, but I especially love the last one; summer fruits – mostly because baking with fresh fruit is probably my favourite thing ever. Case in point – these Fresh Apricot & White Chocolate Scones.

Nutty Peanut Butter & Banana Chocolate Chunk Muffins

Now I know what you’re thinking…  “enough said” – am I right? I mean honestly, the title says it all. If I was reading this post title on another bloggers site, they would have had me at peanut butter – no further explanation needed.

Are we on the same page about peanut butter here? For me peanut butter has never needed any kind of justification. But I guess that’s just because I am a peanut butter addict. Seriously, if a group called peanut butter addicts anonymous existed, I would be a member.

Caramelized Banana Bread

My little brother recently came over for a visit and while searching in our freezer for a bucket of ice cream to dollop atop of his chocolate brownie he discovered my stash… My stash of over-ripe bananas that is! Jeezwhat did you think I meant?

He proceeded to make a disgusted face at the poor bananas, and then make fun of me for hoarding bananas like some sort of crazy banana woman. The sibling love is real… what can I say?

I think his look of disgust came from not from his discovery of the banana stash in the freezer, but from the fact that the bananas were very, very ripe… like I’m talking dark, dark brown … like way past just the spotty phase of banana ripeness. Oh who am I trying to impress? The bananas in my freezer are pretty much black – I’ll admit it looks super kinda weird, but black bananas really do make for the best banana bread. {don’t judge…}

“What do you even have those for!?” he asked me – with some serious disdain in his voice I might add. It’s okay – I’m used to the brotherly abuse. Besides, getting to see the look on his face when I explained to him that I would use those gross very ripe bananas to make a loaf of banana bread that I would then proceed to feed to him, was well worth enduring a little mocking from his end.

Needless to say he was completely outraged {and disgusted} at the very idea that I would dare to use “rotten” bananas to make him banana bread. Now because he is my baby brother, and has recently moved out from my parents nest {and is therefore now finding himself in the situation of learning how to feed himself properly} – I resisted the urge to punch him, and decided to instead take this as an opportunity to explain to him the way of the banana bread world.

Major big sister points earned for the week? I’m going to say yes 😀

Whole Wheat Cinnamon Raisin Soda Bread

I can’t believe we are just two days away from the official first day of fall! Even though it seems like summer only just began, I can’t help but feel giddy about the change in seasons, so even though it is not technically fall yet, I have completely gone into fall mode.  I have put away all of my summer shorts and t-shirts and welcomed dark wash jeans and chunky sweaters back into my daily wardrobe; Cole and I busted out all of our Fall decor and began decorating the house with rich earthy oranges, reds and yellows to welcome the season; and of course, lest I forget to tell you that I have been baking up all kinds of fall inspired goodies that embody all of the warm spices and seasonal flavours that I love so much about fall.

I just love fall inspired baking and I think most of us can agree that when we think about fall baking, some of the first things that come to mind are baked goodies that  pair together fragrant spices like cinnamon, nutmeg, and ginger with seasonal fruits and vegetables like apples, pears and pumpkin. There is just something about the fall season that screams for these flavours, and I am soooo happy to oblige.

Any baked goodies that are laced with cinnamon are probably my favourite things to not only bake but more importantly to gobble up. Yup – anything that is chock full of this incredible spice is pretty much guaranteed to be delicious in my books, so I have wasted no time getting into the fall baking spirit by using cinnamon with reckless abandon this year. I have already had to make a couple emergency trips to the grocery store to replenish my stock of cinnamon at home – no joke – that’s how much I have been baking with it. Feel free to call me the crazy cinnamon lady… I don’t mind.
