Hi fellow Fall & pumpkin spice lovers!

I’m assuming this is what you are, because there is nothing that screams fall more to me than baking with pumpkin and spices – so I can only assume that you have been drawn to this recipe post because you share my love for all things pumpkin spice; Thus you were intrigued by the Pumpkin Spice Latte Scones title …   {So that was the longest sentence ever}  But am I right on this one? Are we fellow pumpkin spice lover buddies ?!?  Yipee!  Let’s continue on this pumpkin spice loving journey together then 😀

Just in case my enthusiasm for pumpkin spice above didn’t tip you off – I have to admit that I have officially come down with a case of Fall fever. This is pretty much the case every year when September rolls around, and this year is clearly no exception. I’ve already hun hung out our fall wreath, planted colourful orange and red mums  in our garden out front, busted out alll the fall decor in our house so its pretty much looking like some sort of combination between an apple orchard and a pumpkin patch in our house as of now and I LOVE it. I feel like Cole’s enthusiasm for the fall decor may not be quite as strong { / non-existent}, but I do think he enjoys watching we run rampant through the house decorating it like a five year old.

Saturday Mornings with Whole Wheat Maple Bacon & Apple Biscuits

Morning friends – I hope you all had lovely weekends <3

This weekend was a bit of a lazy one for Cole and I, but I’m not ashamed to admit it. Sometimes, I just love a good lazy Saturday – don’t you? You know, the kind of Saturday where you spend most of your day either at home, or putting around town with no agenda, and generally accomplishing nothing in particular? These are my kind of Saturdays. There is just something so satisfying about waking up naturally – {as opposed to the sound of a beeping alarm} – even if you are like me and still manage to wake up before 7am on Saturdays without fail, despite the fact that you know you are allowed to sleep in. {Yes, I actually do this every Saturday – what can I say? I’m a morning person}.

Even though I love these lazy Saturdays now, the idea of it is actually something of a new concept for me. Up until about a year ago  I would always schedule my Saturdays kind of like how I schedule my work days – completely structured down to the last detail. Is this strange? I am a planner, so it was always just natural for me to create a to-do list for my Saturdays. I would fill it up with the kind of errands that “need to get done”, but you don’t ever have time to do during the week. So inevitably, I would always find myself stressing out on Saturdays unnecessarily over the tasks that I just had to get done. I think you can guess where this is going… because my lists were always unrealistically long, I was usually unable to actually get everything done. – So I would stress all day about having a failure of a day off just because I couldn’t check off all the things on my list. Do you ever do this? It sounds so silly I know, but for the longest time I just couldn’t help myself.

White Chocolate Blackberry Scones

This will probably come as no surprise to you, but I am a fool for summer berries – almost to a fault. My summer trips to the farmers market can be seriously classified as dangerous because when I see a pint of fresh, local berries – doesn’t matter what kind, be it strawberries, blueberries, raspberries or blackberries – there is no stopping me.  I must buy up as much of that berry goodness as my little wallet will allow. (Which is usually a lotttt more than just one little pint.)

If you were to see the loot I come home with after the average Saturday trip to the farmers market, you might think that I have gone a little mad. It’s okay – I understand the judgement because at first glance, it really looks like I buy way too many berries for a household that consists of two people to ever consume before they go bad. But let me assure you, there is no wasting of fresh berries in my house and I say when it comes to berries, the more the berry’er… get it…. the more the berry’er? Hehe, clearly my devilish wit knows no bounds (not!) ;p

Since I have never met a farmers market berry that I didn’t like, whenever I am stocking up at the market, I make sure that I buy at lease 2 pints worth of each given berry at a time. Why do I do this? Well, because one pint will be used for a baking adventure of  some sort, (what else?) While the other remaining pint will be used as a snack to feast on during the process of said baking adventure. Yes – I can consume an entire pint of berries to myself in one sitting…. what of it?

Fresh Cherry Almond Scones

One of my favourite things about working at the Haney Farmers Market this year is that every Saturday I have an amazing opportunity to get the first glance at all of the bounty that our local farmers are serving up to the public. Whether it be fresh green onions, crisp kale, sweet carrots or rhubarb, guaranteed the local farmers are serving up the most amazing and organic fruits and veggies you have ever seen. You truly can’t underestimate the value of fresh & local ingredients because they really do make all of the difference in your home cooking and baking. 

Because of the gorgeous weather that we in BC have been graced with this spring, the last few weeks our Farmers Market has been full of farmers from the Okanagan offering up a loot of the most delicious early tree fruits you can imagine. This week, the wonderful Okanagan farmers had fresh cherries that were just so beautiful, they could make your mouth water just by looking at them for too long… A-ma-zing.

Dark Chocolate Hazelnut Espresso Scones

Good morning fellow early birds & scone lovers!

It is an absolutely stunning Monday morning here in Vancouver, so even though it is a Monday morning and thus a little bit depressing that I have to go into work today, I can’t help but be more chipper than my usual Monday morning self all thanks to this gorgeous sunshine!  Now I don’t know what it is about these sunny Vancouver mornings, but they always put me in a scone baking mood! Well if I’m being honest, I am pretty much always in a scone baking mood – because if there is one thing I know for sure about myself, it is that I am an absolute scone-aholic.

Not only do I love to bake cornucopias amounts of scones to test out new flavour combinations, but once a batch of fresh scones comes out of my oven… stopping at just one scone is literally impossible for me. Seriously – how do you eat just one scone? As far as I’m concerned, if you can stop after eating just one delicious, flaky, buttery homemade scone… you have super-human powers and deserve to be awarded a medal of honour for the person with the most self control when it comes to scone consumption. This would be a very prestigious award would you agree?

Oaty Apple Spice Scones with Maple Glaze

Saturday and Sunday mornings are my absolute favourite – Not only because it means that I don’t have to go to work, but more so because it means that I can spend my mornings lazily whipping up special breakfasts for Cole and I to devour while cuddled up on on the couch, (still in our pajamas, and catching up on the latest episodes of our favourite HGTV series.)  Sure we could pour our selves a bowl of cereal and call it a day, but for Cole and I, the weekends are the only time during the week that we actually have time to fuss over our breakfast a little bit. Not to mention there is something so much more special about making breakfast from scratch on a weekend morning to enjoy with the ones you love. Ahhh… yes, it is my definition of heaven.
