Whenever we have a family dinner I send a message to each of my three brothers and ask them “What would you guys like me to bake for dessert?” After waiting a whole .5 seconds for them to respond, they usually come back at me with the exact same answer… “Chocolate Pie!”
My brothers are absolute suckers for a good chocolate pie. Usually I will make a totally scratch-made chocolate cream pie; I will make a buttery, flaky homemade pie crust, a creamy egg based silky pudding for the filling and top it off with pillowy whipped cream. But let’s be real – delicious as it is – that is a time consuming AF pie… and sometimes you just don’t have time for that, amiright?
Enter this pie…
So one day when I was in a pinch for time, I decided to cheat and buy pie dough from… DON, DON, DON… the grocery store and decided I would fill it my easiest homemade chocolate mousse recipe.
At first I felt kind of like a failure and a fraud of a baker. I mean… I had bought pie dough… who did I think I was? When I put the pie out I remember actually being nervous. I didn’t even cut myself a slice because I didn’t want to know if it was terrible…
I thought for sure my brothers would be disappointed and ask me why I hadn’t brought my usual cream pie; But to my surprise, it was the exact opposite. They were hooked. All of them going back for second and third slices; telling me it was delicious. They loved the fluffy chocolate mousse and were none the wiser about the fact that the crust was store bought.
I couldn’t understand it. They loved a pie that took me literally fifteen minutes to assemble? No way… they were just being nice; trying to spare my feelings – no wait that couldn’t be it, I mean this is my brothers we are talking about…
So I cut myself a slice, took a hesitant bite, and… holy cow. It was actually delicious. This pie was a revelation for me. Literally the easiest chocolate pie ever, and everyone (myself included) loved it? Say whaaatttt???
Needless to say this is my go to recipe now whenever I am short on time, yet need a dessert that not only looks decadent, but also tastes just as amazing as it looks.

Easiest Chocolate Mousse Pie Ever!
Things you need…
1 x store bought pie crust
Chocolate Mousse Filling
3 1/4 cups heavy whipping cream
1 1/2 cups dark chocolate, chopped & melted **could also use a mix of milk and dark chocolate
2 tsp pue vanilla extract
1/2 pckg cream cheese, softened
Whipped Topping
1 cup heavy whipping cream
2-3 tbsp powdered sugar
1 tsp pure vanilla
chocolate curls, to decorate
** If you want to make this pie even easier – you could totally top it with store bought whipped cream or Cool Whip!
How to make…
Preheat oven to 400F degrees.
Unroll your store bough pie crust into a pie plate. Gently press the pie dough to the edges of the pie plate, and flute the edges however you desire.
Prick the pie shell with a fork all over the bottom and sides. Line the pie shell with tin foil, and fill the dish with pie weights or dried beans.
Bake in preheated oven with the beans in for 15 minutes. After the fifteen minutes, remove the pie shell from the oven and carefully life the tin foil out of the pie plate. Return the pie shell to the oven to finish baking for another 5-10 minutes or until it is an even light golden colour.
Remove from oven and allow to cool completely before filling.
Chocolate Mousse Filling
Place your chopped dark chocolate into a heatproof bowl, and microwave in 30 second intervals until melted. Set aside to cool for a few minutes.
In a large mixing bowl, beat your softened cream cheese until smooth and there are no lumps. Slowly begin to stream in the heavy whipping cream, scraping down the sides of your bowl occasionally. Once all the cream is mixed in, add in your vanilla and turn your mixer to high and whip until stiff peaks form.
Pour half the melted chocolate into the bowl of your whipped cream and use a spatula to gently fold the chocolate into the whipped cream. Add remaining chocolate and again gently fold until the chocolate in incorporated.
Pour filling into prepared and cooled pie shell. Smooth the filling to the edges of the pie shell. Cover and place in the fridge to chill for at least 15 minutes or alternatively you could prepare the night before.
When you are ready to serve your pie, prepare your whipped cream topping (whipping heavy cream, powdered sugar and vanilla together until stiff peaks form) and dollop on top of your chilled pie.
Decorate with chocolate curls and serve.
