You guys! Two recipe posts in one night… This might be a new record for me. Can I get a hell yeah!?
It’s the middle of the night and I am wide awake – which is SO unlike me. Truth be told, I am usually dozing off on the couch by 9:00pm (seriously). So the fact that I am still up right now is nothing short of a miracle and purely because I am just drunk with happiness from the events of this past evening.
It’s currently the middle of the night and I’m wide awake. It’s one of those nights, where all of the excitement from the day makes sleep feel totally unnecessary. So here I am, doing some much needed catch up on recipe posts you have been so patiently waiting for. It feels great right now, but I know I will regret this no sleep decision tomorrow morning. Strong coffee will definitely be a non-negotiable.
But we are here now… so let’s do this.
Have you ever made homemade dulce de leche? It’s a game changer – and actually quite an easy game changer when you make it with a can of sweetened condensed milk.
To be perfectly honest, I can eat dulce de leche just straight from the jar. It’s that good. But pair it with a chewy chocolate chip cookie & you will be forever changed.
Is this chocolate chip cookie cake a little over the top? Perhaps. But if there is one thing I know for sure; it’s that if this cookie cake is considered wrong, then I don’t want to be right.

You guys… these cookies. I die.
I think you guys know we well enough now to know that I am a sucker for a cookie with a crackly top – like the very sight of crackly cookies makes me weak in the knees. So needless to say these cookies are pretty much what dreams are made of for me.
Crisp crackly edges, with a gooey, chewy, brownie-like texture on the inside; these cookies are simply too good to stop at one… or two, or three… okay you get the picture. So I basically ate a whole tray of these cookies – but they were beyond delicious so what’s the problem?
Can we just talk about hot cross buns for a minute? Or like maybe five minutes because… hello – they are delicious! I mean anything that involves a warm soft, fluffy bun, studded with goodies & topped with a sweet glaze is right up my ally!
Also, Easter is right around the corner, which means baking fresh batches of hot cross buns on repeat until then is perfectly acceptable and therefore we should all take full advantage of this opportunity 😀
Confession; I’m pretty sure I promised you all this recipe about nine months ago… so to those of you who requested it, I am sooo sorry it took me so long to get it up. Hopefully we are all operating under some form of the saying “better late than never,” and we can put this injustice behind us 😀
How do you guys like your oatmeal muffins? Hot? Cold? Plain? Buttered?
Hands down, my favourite way to eat an oatmeal or bran muffin is warmed up, with a smear of creamy butter and a dollop of raspberry jam. I mean seriously, does it get any better than that?
Is it just me or is there just something so hypnotizing about roll cakes? Whenever I make one, I find myself leering at it like a total weirdo… does anybody else have this problem? There is really something about these cakes that just makes you want a slice – no matter what time of day. Roll cake for breakfast? Heck yes!
What exactly is it about giant, crackly topped chocolate chip cookies that makes them so irresistible ? Is it simply because at the end of the day we eat with our eyes, and the crackles are just so pretty that we can’t help but want to bite into them as soon as humanly possibly? Or is it because we know that lurking just beneath that gorgeous crisp crackle is a soft, chewy cookie, studded with ooey, gooey chocolate and an overall flavour that tastes like childhood?
I think for me it would have to be the latter explanation; nostalgia never fails to capture my heart when it comes to homemade treats.
Okay guys, let’s get right down to the facts; daylight savings is here, it’s officially Spring, so therefore; I am ready for Spring. Soooooo ready for Spring. Unfortunately Vancouver seems to have forgotten that it’s supposed to be Spring, and has continued to be not only very cold, but also very wet (sigh).
Truth be told this cold rainy weather is very typical for this time of year here in Vancouver. So Naturally you would think I would be used to the rainy Vancouver Springs by now, but for no good reason at all, every spring I get my hopes up thinking Spring somehow equals sunshine and it most definitely does not.
Alas, it will probably be another couple months before we see “Spring” weather here – but it’s okay, because today I’m making my own sunshine with the help of a very big batch of pretty pink donuts &my new favorite Spring accessory.
