It’s feeling more and more like fall here.
The days are slowly but surely getting shorter, the air has a noticeable chill and is filled with the incredible scent from freshly fallen leaves from the turning trees.
The shift in seasons always pulls me to my kitchen. It’s like a gravitational pull towards my spice cabinet and my oven. As soon as September rolls around, I can’t help but long for anything apple spice. Apple pie, warm mulled apple cider, apple crumb cake, apple crisps… the list goes on and on.
Once the apple orchards open up, you’ll find me there. There is nothing more fun than picking fresh apples with the intention of bringing them home later to bake something comforting.
Not to mention I could wander beautiful rows of the orchard for hours getting lost in the beauty.
Apple Muffins are one of my favourite things to whip up on a chilly fall morning. Enjoyed along side a warm mug of coffee… I’m not sure it gets much better than that.
These muffins are the definition of sweet and simple. They whip up in a flash, make little mess, and simple as they might be, they are always warm, delicious and comforting.
Warmly spiced, with a soft and tender inside and a crisp muffin top… these muffins are what my fall baking dreams are made of.

Spiced Apple Muffins
Things you need…
2 1/4 cups all purpose flour
1/2 tbsp baking powder
1 tsp baking soda
2 tsp cinnamon
1/2 tsp ginger
1/4 tsp nutmeg
1/8 tsp cloves
1/2 tsp salt
1 cup dark brown sugar, packed
1/3 cup butter, melted
1/3 cup vegetable oil
1 1/2 cups buttermilk
2 large eggs
2 tsp pure vanilla extract
1 cup grated apple
1 apple, thinly sliced into half moons
How to make…
Preheat your oven to 400F degrees. Line a muffin tin with parchment liners.
In a large bowl, whisk together the flour, sugar, spices, salt, baking powder and baking soda; Make a well in the centre of the dry ingredients and set aside.
In a separate bowl or liquid measuring cup, whisk together the buttermilk, oil, eggs, and vanilla until combined. Next lowly pour in the melted butter and whisk to combine.
Pour the wet ingredients into the well of the dry ingredients and use a spatula to gently fold the ingredients together. Once the mixture is just starting to come together, add in the grated apple and mix gently to distribute, being careful not to over mix as this can lead to tough muffins. If you still have streaks of floury bits in your batter – this is the perfect consistency.
Scoop batter into prepared muffin cups, filling each cup full to the top. If you want a larger muffin like mine here, you can mound extra batter on top.
Take 3 slices of apple and fan them out on top of the batter. Repeat with each muffin. Sprinkle the tops of each muffin with granulated sugar.
Place in the oven to bake for 18-20 minutes at 400F. Remove from the oven and allow to cool for at least 5-10 minutes before devouring.
