Cookies…. I mean honestly what can I say about them? They are classic, they are simple to make, they are ooey, gooey bites of deliciousness – Put simply, they are perfection in the palm of your hand.

Now although I can honestly say that I have never met a cookie I didn’t like, I do have to say that not all cookies are created equal. I will be the first to admit that I have had myself many homemade cookie recipe failures over the years of cookie trials in my quest to create the perfect recipe. You know the recipe I’m talking about right? That elusive homemade cookie recipe that we all search for? The recipe, that will never fail to create the perfect cookie every time?

Now everyone’s definition of the “perfect” cookie will vary based on opinion – but for me, the definition of the “perfect cookie” isas follows:

“The Perfect Cookie” One that is slightly crisp on the outside, while still being oh so gooey and chewy on the inside, with a lovely crinkly top, and lots of flavour. 

So if the above description matches with your definition of what the “perfect cookie” should be, then my recipe for these Double Chocolate Coffee Addict Cookies is the one for you. ​

These cookies mean some serious business and I feel like the only way to convey just how amazing they are is to describe them as like the perfect love child of a brownie and a chocolate chip cookie… mhmmm.

These cookies have the most amazingly fudgy texture on the inside, with a light, crisp exterior. The addition of a hint of espresso powder to the mix, heightens the flavour of the chocolate to a whole new level, and the blend of milk chocolate, dark chocolate and white chocolate chunks just takes these cookies to a whole new level of delicious.

Boozy Hot Chocolate Bread Pudding

It seems that for most of us, at some point in life {usually in our high school / college years} our mugs of hot chocolate inevitably get replaced with hot beverages like black coffee, americanos, and latte’s as a direct result of our struggle to stay awake during our adolescent juggling act between school, part-time jobs, studying, and struggling to keep up with friends & family. At least, such was the case for me.

But despite my intense love for glorious, wondrous,  caffeine – No matter how old I get, I never get sick of a good old fashioned mug of warm, rich, homemade hot chocolate. In fact, given the opportunity, nowadays I will gladly choose a mug of hot chocolate over a steaming cup of joe any day. Do you feel the same way?

There is just something so comforting and amazing about cradling a mug of hot chocolate, wouldn’t you agree? I think the reason why hot chocolate holds such a special place in many of our hearts is because drinking hot chocolate is associated with childhood – you know the days long before we were introduced to the many wonders of caffeine.

Whenever I make myself a mug of hot chocolate I can’t help but be reminded of  the days when my mom would head up a big pot of homemade hot chocolate for my brothers and I after a chilly fall afternoon of jumping in leaf piles or after a snowy afternoon spent throwing snowballs and building snowmen. My mom would peel us out of our cold wet clothes, throw everything in the dryer, wrap us up in warm blankets on the couch and we would wait patiently with rosy cheeks and noses while she poured us each a nice big mug of her homemade chocolate.

There really was nothing better than holding those giant warm mugs in our cold hands and gulping down that chocolatey goodness to warm us up from the inside out.  Of course, our hot chocolates were always topped off with either a healthy dollop of whipped cream or a mound of mini marshmallows, because… well what the hell would hot chocolate be without whipped cream or marshmallows???

Grandmas Pumpkin Pie

Happy Friday lovelies!

So I have to start today’s post off with an apology and say that I am so sorry that I was never able to get this recipe posted in time for Canadian Thanksgiving, :(:( {seriously disappointed in myself}, but I figured better late than never right?

So if you are a fellow Canadian and in need of a reason to bake up a Pumpkin Pie {not that you ever really need a reason for pumpkin pie} perhaps a Friendsgiving dinner is in order? I have to confess that I have been toying with the idea of hosting a Friendsgiving at our place just so that I could justify baking up a couple of pumpkin pies…. Could this need to get my holiday pumpkin pie fix, disguised as a gathering of friends be the work of an evil, pie hungry genius? Possibly…

Truth be told, I have never hosted a Friendsgiving, but I really want to make this a new tradition of ours. Cole and I are always running around on the Canadian Thanksgiving weekend to attend alllll of our family Thanksgiving dinners, that we never get a chance to enjoy time with friends – which I find to be a shame since my friends are one of the things that I am most thankful for in my life. So I wont really know what I’m doing when I host this Friendsgiving –  but one thing I do know is that  it will be complete with a homemade pumpkin pie… so basically it will be amazing :p.

Peanut Butter Chocolate Bar Halloween Cupcakes

Happy Halloween eve lovelies!

I hope you are all enjoying your Friday evening and that you have mega awesome plans for the Halloween weekend!

I made these cupcakes for a birthday order today and I just had to bang out this recipe post for you because they were just too darn cute not to – especially because Halloween is tomorrow and these would make the perfect Halloween dessert addition to any upcoming Halloween events you might have happening this weekend.

Cole and I will be starting off the weekend at the Farmers Market tomorrow, serving up some Halloween themed goodies and then on Sunday we have a whole lot of nothing planned. That’s right – nothing! haha. It’s supposed to be a pretty rainy Vancouver weekend, so we both agreed that we would love nothing more than to snuggle up at home with Katniss and watch creepy movies on Netflix in honour of Halloween. Not going to lie, I am pretty stoked about this 😀

So what are these spookly little cupcake beauties anyway? Well let’s just say they were inspired by a couple of my favourite Halloween treats…. Snickers, and Reeses peanut butter cups – mhhmmmm. I could eat those little bundles of chocolatey, caramely, peanut buttery joy allllll day long.

Sticky Maple Date & Pecan Scones + Freezer Storage Tips

Alright every body here’s the deal – these scones are amazing, and you need to  make em’ happen.
Okay, I guess I could probably elaborate a bit further; Although, once you take one bite out of these beauties, you will understand why I thought my opening sentence required no further explanation 😀

As returning readers already know very well – I am a girl who is positively obsessed with scones. For those of you who are new to the blog; Let me just say that given the opportunity, I would gladly eat scones everyday for the rest of my days on this earth. I know they say you should never say never – which by the way is a totally hypocritical phrase, but we won’t get into that today… – but I can guarantee you that I will never, EVER get sick of eating good scones. I am one hundred and ten percent confident in that statement.

So why the obsession with scones you ask? Well besides the fact that they are loaded with butter, {which as far as I’m concerned is one of the best things on this entire earth},  they are also warm, flaky and fluffy little bundles of pastry deliciousness – Seriously need I elaborate more? For me, scones are the epitome of homemade baked goodness perfection. You can bake sweet scones, you can bake savoury scones, you can bake plain scones, you can bake scones that are loaded with fresh fruits, dried fruits, chocolate, cheeses, vegetables and everything in between!

No matter what you throw into a scone – it is pretty much guaranteed to be delicious… Did I mention that they are buttery, flaky and fluffy all at the same time…? They are A M A Z I N G and I pretty much can’t go a weekend without whipping up a batch of scones and trying out new flavour combinations for Cole and I to devour.

Pumpkin & Toffee Chocolate Chunk Cookies

Hey – Happy Friday peeps!

We made it through another crazy week – Boo ya! We are seriously deserving of some delicious cookies don’t you think? But not just any cookies…  not just your run of the mill chocolate chip cookies – although I have nothing against chocolate chip cookies, because sometimes  a mean, homemade chocolate chip cookie is exactly what a tummy needs. But today is one of those celebratory Fridays where just a regular cookie isn’t gonna cut it.

So let’s take this whole celebratory cookie idea to the next level shall we?  What say you to taking an awesome chocolate chip cookie recipe, and throwing in a little fall inspiration, a touch of spice, a lotttt of good quality dark chocolate and perhaps some toffee pieces for good measure??? Happy Friday everybody! And for all you Canadians out there – happy beginning to the Thanksgiving long weekend <3

I just love Thanksgiving don’t you? Not only because of what the holiday itself stands for, but also because I always feel like it marks the true start of the family holiday season. The time that we all really focus on spending time with family and enjoying the simple things in life that matter the most. Like going to the pumpkin patch on a Saturday to embrace the kid inside us all, while picking up a wagons worth of all different shapes and sizes of adorable pumpkins; or the beauty of cuddling up on the couch on a rainy afternoon to watch old movies; or just sharing in the beauty of the vibrant fall colours outside by going for long walks in the crisp fall air with someone that we love.

There are so many things to love about the fall season and I could go on and on about this for days – but the gist of my ramblings is that for me Thanksgiving has always been that marker to the true beginning of this wonderful season. My mom and I have always shared in the love for this season, so I think this why we often tend to get a little carried away when it comes to our family Thanksgiving dinners ever year. As in we act like we are cooking for a guest list of about 50 people when in reality it is usually only about 10 of us gathered around my parents dining room table.

We always end up seriously over cooking and end up having left overs that will last us a week. I mean It’s so hard not to when there are so many amazing harvest inspired dishes to gobble up – honestly can you blame us?  Besides, I’m not one to complain about Thanksgiving leftovers – no sirree…

Pumpkin Spice Latte Scones

Hi fellow Fall & pumpkin spice lovers!

I’m assuming this is what you are, because there is nothing that screams fall more to me than baking with pumpkin and spices – so I can only assume that you have been drawn to this recipe post because you share my love for all things pumpkin spice; Thus you were intrigued by the Pumpkin Spice Latte Scones title …   {So that was the longest sentence ever}  But am I right on this one? Just in case my enthusiasm for pumpkin spice above didn’t tip you off – I have to admit that I have officially come down with a case of Fall fever. This is pretty much the case every year when September rolls around, and this year is clearly no exception. I’ve already hun hung out our fall wreath, planted colourful orange and red mums  in our garden out front, busted out alll the fall decor in our house so its pretty much looking like some sort of combination between an apple orchard and a pumpkin patch in our house as of now and I LOVE it. I feel like Cole’s enthusiasm for the fall decor may not be quite as strong { / non-existent}, but I do think he enjoys watching we run rampant through the house decorating it like a five year old.

Sour Cherry Pie Bars

Remember how I was telling you about how it has become something of a tradition for me to bring baked goods into work on Friday mornings for the office staff to enjoy? Well recently there has been some hot debate among my colleagues over which treat has been the best out of everything that I have brought in so far. Based on the opinions I have heard, the top two vote getters’ so far have probably been my Blueberry Oatmeal Crumb Bars and the White Chocolate Raspberry Sweet Rolls.

My boss is of the opinion that the Blueberry Oatmeal Crumb Bars were the absolute best and over the past couple of weeks he has been not so subtly hinting that he would like me to make another batch. Last week he came up to me and said “You know what was good? Those blueberry bars you made a few weeks ago… we should bring some of those back into the office. “ Super subtle right? (Not.)
