I will never say no to a doughnut. I just love them, and you would be hard pressed to find a doughnut flavour that I don’t like. That said, If you were to ask me what my favourite doughnut is, I would hands down have to say cake doughnuts. Now I have nothing against a good yeast doughnut; but given the choice between yeast or cake doughnuts, I will always go for the cake doughnut.

I have been whipping up enough doughnuts to feed a small army, all in an effort to make the softest, fluffiest homemade yeast doughnuts possible, and I think I have finally done it. So all my fellow doughnut lovers unite for this recipe, because it is a winner!
Do we ever really need a reason to make donuts? I feel like not. Especially when they are in the form of these Coconut Raspberry Donuts. Regardless of the time or day or whether or not you have a donut worthy occasion – you should feel free to make these donuts whenever your heart desires.
For me donuts are pretty much always on my mind, but when my pals over at Albion Fit kindly reminded me that National Donut Day is upon us next week – I basically felt that it was my duty to make these donuts happen… for the sake of National Donut Day of course 😉
Okay guys, let’s get right down to the facts; daylight savings is here, it’s officially Spring, so therefore; I am ready for Spring. Soooooo ready for Spring. Unfortunately Vancouver seems to have forgotten that it’s supposed to be Spring, and has continued to be not only very cold, but also very wet (sigh).
Truth be told this cold rainy weather is very typical for this time of year here in Vancouver. So Naturally you would think I would be used to the rainy Vancouver Springs by now, but for no good reason at all, every spring I get my hopes up thinking Spring somehow equals sunshine and it most definitely does not.
Alas, it will probably be another couple months before we see “Spring” weather here – but it’s okay, because today I’m making my own sunshine with the help of a very big batch of pretty pink donuts &my new favorite Spring accessory.
We have had one heck of a winter here in Vancouver & I don’t know about you guys, but I honestly could not be more ready for summer. Like, at this point I would be completely fine if we could just skip Spring and go straight to hot sunny days, filled w/ trips to the beach and the market to pick up fresh summer berries & stone fruits.
Okay, so I know it’s still February and we have a longgg way to go before days like that can happen – but hey, a girl can dream right?
So today, (despite gloomy, freezing Vancouver weather,) I am embracing all the summer vibes, and throwing a little impromptu donut party w/ Pure Leaf Peach Iced Tea and these Ginger Peach Fritters. Who else wants to join in!?

Are you all excited and ready for 2017? Do you usually make New Years resolutions? I have to be honest and say that I usually don’t do this – mostly because I have never been very good at goal setting and I am even worse at actually sticking to my resolutions.
However, despite my terribly track record in the New Years resolution department, I love hearing all of the wonderful goals people set for themselves. I really admire the thought and dedication it takes to come up with them and of course to actually stick to them.
Hmm.. all of this resolution talk is making me want to set one for myself. So this year I think my resolution will be to eat more donuts … yes, now that seems like a resolution I can stick to 😀 Maybe not your traditional healthy resolution… but I feel like we could all use some more donuts in our lives. Are we on the same page here?
If you were to ever ask me what my favourite donut is – I would tell you that it’s hands down an Apple Fritter. No if’s, and’s or but’s about it. I will never, EVER say no to an apple fritter. Doesn’t matter what the circumstance, if there is an apple fritter up for grabs, I am game. Like even if I just ate an entire turkey, with a side of mashed potatoes and gravy, and was deep in a food coma… I would still have room for an apple fritter.

Is it just me or was yesterday a tough Monday? Maybe it’s just me, but it felt sooooo long. Probably because I just couldn’t wait to finish work & post this recipe for you guys!
