Blueberries and Cream Pastry Puffs

       

There are so many things I love about Summer; sunshine; blue skies; beach days; warm breezes; picnics; campfires; s’mores… the list goes on and on. But if I had to choose my favourite thing about Summer, I would have to say that fresh local berries and stone fruits steal my heart every time.

Last weekend Cole and I went berry picking and came home with buckets of ripe strawberries, sweet raspberries and juicy blueberries. I am up to my ears in fresh local berries right now and absolutely loving every minute of it.

Blueberry Vanilla Bean Shortcakes

Shortcakes like these hold a special place in my heart.

I think a lot of the time when people in North America think of “Shortcake” they imagine a vanilla sponge cake layered with berries and whipped cream.

But growing up in our house shortcakes meant something different. Shortcakes in my moms kitchen meant sweet, flaky, buttery, almost scone-like bundles of pastry joy, that were loaded with jam or fresh berry compote and borderline excessive amounts of freshly whipped cream…

In the summertime we would enjoy shortcakes like this for breakfast and dessert on repeat with all the fresh summer until they disappeared. Subsequently they have become one of my all time favourite indulgences. Honestly, just thinking about the word “Shortcake” gets my mouth watering, so I hope that you and your family will enjoy them as much as we always did.

Good morning lovelies! So who else is so excited that Summer is finally here!? I just love summer – literally everything about it!

What are your favourite things about this gorgeous season? Here are a few of mine… Gorgeous sunshine, warm breezes, naps in the shade, aimless road trips, barefoot strolls, pink sunsets, long nights, early hikes, shorts & flip flops, sun kissed shoulders, freckled cheeks, beach days, sand castles, moonlight swims, sneaky splashes, salty hair, wet bathing suites, sandy toes, camping trips, camp fires, marshmallow roasting, s’mores making, BBQ everything, popsicle making, melting ice cream cones, farmers market wanders, & alllllll the fresh summer fruit! 

So yeah, I pretty much love everything about Summer, but I especially love the last one; summer fruits – mostly because baking with fresh fruit is probably my favourite thing ever. Case in point – these Fresh Apricot & White Chocolate Scones.

Pumpkin Spice Latte Scones

Hi fellow Fall & pumpkin spice lovers!

I’m assuming this is what you are, because there is nothing that screams fall more to me than baking with pumpkin and spices – so I can only assume that you have been drawn to this recipe post because you share my love for all things pumpkin spice; Thus you were intrigued by the Pumpkin Spice Latte Scones title …   {So that was the longest sentence ever}  But am I right on this one? Are we fellow pumpkin spice lover buddies ?!?  Yipee!  Let’s continue on this pumpkin spice loving journey together then 😀

Just in case my enthusiasm for pumpkin spice above didn’t tip you off – I have to admit that I have officially come down with a case of Fall fever. This is pretty much the case every year when September rolls around, and this year is clearly no exception. I’ve already hun hung out our fall wreath, planted colourful orange and red mums  in our garden out front, busted out alll the fall decor in our house so its pretty much looking like some sort of combination between an apple orchard and a pumpkin patch in our house as of now and I LOVE it. I feel like Cole’s enthusiasm for the fall decor may not be quite as strong { / non-existent}, but I do think he enjoys watching we run rampant through the house decorating it like a five year old.
