Lemon Cheesecake Tart

Fact: This is my first blog post in almost a month. Clearly I am the worst “blogger” ever.

Truth: I have been feeling totally un-creative lately… is that a word un-creative? Probably not – let’s go with un-inspired instead. I have been feeling totally un-inspired. I feel ridiculous saying this by the way. I mean how silly is it that I couldn’t even manage to post a recipe for a simple batch of cookies in the span of a month? But seriously don’t ask me that, because I don’t have anything close to a good answer to that question.

Rhubarb-Banana Crumble

Happy Monday lovelies!

So this morning as I reached into the refrigerator for some cream to add to my much needed coffee, I couldn’t help but be enamored by the presence of a gorgeous bundle of bright pink rhubarb I picked up at the farmers market over the weekend. It looked so beautiful all bundled in it’s bow-tied string, that I honestly wanted to cradle it in my arms an cherish it for always…. is that strange? Don’t answer that.

Seriously though, can rhubarb season just please never end????¬†I don’t know about you but I just love that gorgeous pink stuff. It’s one of my all-time favourite ingredients to bake with because it is so versatile and pretty much tastes amazing with anything and everything. Every year I try it out with different fruit combinations and I always find myself falling in love with the new flavour combo’s.

Such was the case when I stumbled upon a recipe in one of my favourite Canadian Living cookbooks for Rhubarb-Banana Crumble. Say whatttt????? Now I must be straight up crazy, because until I saw that Canadian Living recipe, I had never even thought to pair together rhubarb and banana; But as soon as I thought about it, I was like uhmmm duh!! ¬†So after putting my own spin on the recipe and subsequently tasting {a lottt} the result… I have to be honest with you guys and say this is hands down my favourite rhubarb dessert of the season.

Chocolate Velvet Pie

If you have spent more than roughly thirty seconds on my blog, you will know that it’s no secret that I kind of have a special relationship with chocolate. But for those of you who are just meeting me, let me just say this… I love chocolate. I literally have zero self control when it comes to chocolate. Once I have a piece, I can’t stop until I have consumed the entire chocolate supply.

And since we’re getting to know each other, I should probably tell you that I also love pie.¬†Suffice to say,¬†the idea of chocolate and pie coming together in a¬†magical harmony of homemade, baked¬†deliciousness is pretty much my idea of heaven.

Grandmas Pumpkin Pie

Happy Friday lovelies!

So I have to start today’s post off with an apology and say that I am so sorry that I was never able to get this recipe posted in time for Canadian Thanksgiving, :(:(¬†{seriously¬†disappointed¬†in myself},¬†but I figured better late than never right?

So if you are a fellow Canadian and in need of a reason to bake up a Pumpkin Pie {not that you ever really need a reason for pumpkin pie} perhaps a Friendsgiving dinner is in order?¬†I have to confess that¬†I have¬†been toying with the idea of hosting a Friendsgiving at our place¬†just¬†so that I could justify baking up a couple of pumpkin pies…. Could this need to get my holiday pumpkin pie fix, disguised as a gathering of friends be the work of an evil, pie hungry¬†genius?¬†Possibly…

Truth be told, I have never hosted a Friendsgiving, but I really want to make this a new tradition of ours.¬†Cole and I are always running around on the Canadian Thanksgiving weekend to attend alllll of our family Thanksgiving dinners, that we never get a chance to enjoy time with friends – which I find to be a shame since my friends are one of the things that I am most thankful for in my life.¬†So I wont really know what I’m doing when I host this Friendsgiving – ¬†but one thing I do know is that ¬†it will be complete with a homemade pumpkin pie… so basically it will be amazing :p.

Strawberry Rhubarb Pie

I have a very serious question for you – Is there anything more perfect in this world than a classic golden crust fruit pie? …

Is the answer to this question as obvious to you as it is to me?¬†I mean honestly I don’t think I can think of anything that is more scrumptious than a ooey, gooey, sweet & tart pie filling that has been baked to absolute perfection encased by a thick, flaky, buttery, golden brown crust – seriously… I got nothing. Especially when you eat your slice of pie with a hearty scoop of vanilla ice cream…. I mean you just can’t get any more perfect than that…. you just can’t.

For heavens sake, even before I put this pie in the oven, it was a thing of beauty and before it was baked to ooey gooey fruity, flaky, buttery perfection, I just had to snap a shot. Once I had assembled the lattice top, I was about ready to just dive in and eat the raw pie dough and fruit filling right then and there – no baking required. I don’t know about you, but I am¬†not at all¬†opposed to eating raw pie dough – is that gross of me? Maybe, but I don’t care. Raw pie dough is delicious and if you don’t believe me, I insist you give it a try – I won’t judge you. Remember, ¬†there will never been any food related judgement on this site ūüėÄ

Individual Spiced Blueberry -Apple Crumbles for Two

How many of you out there, who like me, are of the opinion that a day isn’t complete unless it ends with a little bit of dessert? I don’t know about you, but I can’t seem to help myself when it comes to my dessert cravings after I have finished my dinner. It doesn’t have to be a fancy dessert – just that little something sweet to satisfy my need for sugar before the day is through.

Like I said before, ¬†my desserts do not need to be fancy – In fact, most nights I am perfectly content with calling a bowl of freshly sliced strawberries or a spoonful of chocolate almond butter my dessert for the evening. However, there are definitely days when I crave something a little bit more decadent for my weeknight dessert. My cravings for something a little bit more complex in the dessert department usually come at the end of a very long work day or as was the case yesterday… at the end of a very longgggg Monday. Yes, Mondays – I think you know what I mean…

So after Cole and I had finished eating a very healthy dinner of grilled chicken breast with broccoli & kale salads, I felt like we were extremely deserving of a delicious dessert to reward our healthy couple behaviour :p So while Cole was out in the garage working on his truck and various other man tasks, I was scanning through my pantry and fridge for some inspiration for the perfect surprise weeknight dessert for two.

Because¬†I hadn’t exactly followed through on my plans to go grocery shopping over the weekend my ingredient stock was a little low. I was fresh out of eggs and the only ingredients I had (besides dijon mustard and lots of carrots) was about 1/4 cup of butter and a few blueberries from a previous baking endevour. My first thought – I can work with this ūüėĬ†Immediately my mind got stuck on the idea of a fresh, warm blueberry crumble for Cole and I to share with a scoop of vanilla ice cream while sitting on the couch watching Lost on Netflix (because we are currently obsessed with that show.)
