Fresh Peach Cupcakes

Morning lovelies!

First things first, I must apologize for the delay in between posts – gah! I have no real excuse except to say that it has been a crazy busy few weeks – but really, who isn’t busy right? I told you – I have no good excuses…. I fell behind – it was stupid… please forgive me 🙂

So last weekend I bought some local peaches from the Haney Farmers Market and they have got to be the best peaches I have ever had in my life. They were all so, so juicy, and just ripe with peachy deliciousness. When I cut into the first one and had a taste,  just to make sure they were good ;p} It was so dang delish I just wanted to eat the entire box.

Unfortunately I had plans for these peaches and I couldn’t just up and eat them until I was sure I had enough for leftover snacking. Sadly- I had no such luck and I ended up using all of the peaches I bought to fulfill a cupcake order. So basically the number one plan for this Saturday is to make a B-line for the farmers market fruit booth so that I can buy up as much as possible, chop em’ up and freeze them to use throughout the year when we are devoid of fresh peaches.

So I have a sweet and simple post for you all today with these Peach Cupcakes that I made for a custom order on the weekend that I really wanted to share with you before peach season bids us adieu – speaking of which, can you believe it’s almost the end of summer…. ? It’s crazy, I can’t believe we are almost in September!

So with no more explanation as to why these cupcakes happened, {because really, who needs reason when you have cupcakes} here is the recipe – I hope you enjoy.

Raspberry-Apple Pie + Tips for the Perfect Pie!

1407813922For some people, Summer is a time for hitting the beach; for others, Summer is a time for lazy vacations; for me, while I enjoy the latter, Summer is most importantly a time for Pie! Oh yes! Now you may find this hard to believe, (probably not,) but has been absolutely no shortage of pie in my house this Summer. In fact, the number of pies that I have managed to bake this Summer is definitely bordering on insane – but come on, how could I possibly pass up the opportunity to bake with some of the Summers finest and freshest local fruits??? The answer to that questions is simple – I couldn’t and I most certainly did not.

Let’s start from the beginning…

Fresh Blackberry Cornbread

Morning peeps!

Guess what? It’s Thursday and that can only mean one thing…. it means that tomorrow is Friday and I think that deserves a hell yeah! Can I get a woop woop?!

Clearly I am a little (a lot) excited for the weekend, which isn’t exactly a new experience – I am always excited for the weekend. But this weekend I am extra excited  – mostly because this Saturday we are headed out to Delta to check out the the Deja Vu Vintage Market, which in other words is basically my heaven. I love vintage markets and will definitely be looking to Cole for restraint so as to not let me purchase literally everything I come across that is vintage & kitchen related.

Not to mention after the vintage market we will be heading for Vancouver to have a little browse around the West Elm stores & Pottery Barn… So basically we are just doing a shopping day for ALL THE THINGS that are house & home furniture related. My favourite kind of Saturday 😀 What kind of fun things are you getting up to this weekend?

Fresh Cherry Almond Scones

One of my favourite things about working at the Haney Farmers Market this year is that every Saturday I have an amazing opportunity to get the first glance at all of the bounty that our local farmers are serving up to the public. Whether it be fresh green onions, crisp kale, sweet carrots or rhubarb, guaranteed the local farmers are serving up the most amazing and organic fruits and veggies you have ever seen. You truly can’t underestimate the value of fresh & local ingredients because they really do make all of the difference in your home cooking and baking.

Because of the gorgeous weather that we in BC have been graced with this spring, the last few weeks our Farmers Market has been full of farmers from the Okanagan offering up a loot of the most delicious early tree fruits you can imagine. This week, the wonderful Okanagan farmers had fresh cherries that were just so beautiful, they could make your mouth water just by looking at them for too long… A-ma-zing.

White Chocolate – Raspberry Sweet Rolls

Alright, first things first, I promise that I am officially done changing up my websites name! I know it’s just ridiculous how I have managed to do this twice in the span of one month, but I have finally settled on a name that I think really fits what my blog is about and also makes me smile! Let me know what you think about the name change 🙂 Now back to today’s blog!

Happy Friday everyone! Yipeee! So basically it has become something of a tradition for me to bring in some sort of baked good to work on Friday mornings. How did this happen you ask? Well basically, about two months ago I started to casually bringing in some leftover treats, which I had lying around at home from various weeknight baking adventures. I finally realized that there is only so much baking that two people (Cole and I) can consume during the week without it going bad and decided it would be a much better idea to share the bounty at work.

Anyways, I guess people enjoyed the homemade goodies, because I soon found that people were seeking me out in the office to ask me if, (and what) delicious treats I would be bringing into our little staff room each week and I couldn’t just stop bringing stuff in when they were asking me so nicely! So I started bringing different baked goods in every Friday morning (just because I thought this would make our Fridays even better than they already are.) Thus, the tradition of Kristie’s Friday baked goods in the office was born.

Mini Lemon Sauce Pudding Cakes

I will always cherish the relationship my Mom and I have because we have been lucky enough to be an extremely close Mother-Daughter pair. My Mom must be held accountable for the success of our relationship because she is the one who has always made it so easy to get along with her. Not only is she the most kind, understanding and loving Mother on the planet, but she has also always made it extremely easy for me to be open and honest with her about everything that is going on in my life. I am a very lucky girl to have her in my life.

Because we enjoy each others company so darn much, we make a point to schedule regular Mother-Daughter days, where we just spend the entire day together doing whatever it is that we feel like doing. It really doesn’t matter what we do whether its baking, roaming the mall, going for a walk in West Vancouver, shopping at Whole Foods, going for lunch or just sitting on the couch watching Crazy Stupid Love, (we love this movie,) as long as we are together, we are happy.

Unfortunately with the chaos of our lives these past few months we haven’t been able to have our usual days together and we have both been extremely distressed by this issue. So finally, this past weekend my Mom and I were able to coordinate one of our famous “Mother-Daughter Days,” and it could not have been more perfect!Read More

Strawberry -Rhubarb Coffee Cake

The sun has finally come to Vancouver and according to the weather network, it is FINALLY here to stay for a while! To say that this makes me happy, would be the understatement of the century. To put it quite simply I LOVE the sun! I seriously cannot get enough of it, and now that is has arrived, it has put me in the mood to bake all kinds of goodies that have a light and airy summer taste. Seriously, the prospect of berry season has actually kept me up nights the past week… I just couldn’t stop daydreaming about all the different recipes I want to try and concoct this summer.

My head is buzzing with thoughts of lemon cakes, fruit tarts, pies, homemade ice creams, fruit cheesecakes… what were we just talking about? Oh yes! Summer baking, I could go on for days about the baked goods I have been day dreaming about, but I’m sure you would prefer if I get on with the recipe.
