I’m going to keep this post short and sweet today because let’s face it – it’s Sunday and I’m sure you’ve all got brunch on your minds / tummies that need feeding asap {and let’s be honest, I have a tendency to ramble…}. So let me get right to it…
Four words… Mini Waffle Breakfast Sandwiches… mhmmm…. Shall I go on?
I made these Mini Waffle Breakfast Sandwiches a couple weeks ago for Cole and I on a whim one fine Sunday morning, because I was experiencing a serious craving for waffles, while simultaneously feeling a need to eat all the bacon and eggs in the world.
I figured the best way for me to satisfy my cravings as quickly as possible was to create something that would house all three of the craved ingredients in one bite – AKA; a sandwich or rather, a breakfast sandwich. But instead of using a biscuit or an English muffin – I would use the waffles as the “bun” of the sandwich.
Now because no waffle is ever complete without a little syrup , {and because bacon and maple syrup were seemingly made for each other}, I decided that it would only make sense for me to use maple syrup as my main condiment for the sandwich…. Good decision? I thought so 😀
This recipe is super simple – on account of it’s really just instructions for my favourite waffle recipe.
My idea is that then you can stuff your waffles full of any of your favourite breakfast sandwich fixin’s to make them your own.
Our breakfast sandwiches were made up of the waffles, caramelized onions, bacon, poached eggs, a slice of brie cheese and a drizzle of maple syrup. The combo of the crisp waffles, with the maple syrup, caramelized onions, smokey bacon, and creamy brie cheese was seriously killer, and comes highly recommended.
So if you want to give this combo a try, follow the fixin’s listed in the recipe below. However, if you prefer eggs over easy instead of poached; or sausage instead of bacon; or cheddar instead of brie – I encourage you to change up the fixin’s and make the sandwiches your own!
One final thought – these would make an awesome build-your-own breakfast sandwich situation, if you are hosting a Sunday brunch! How much fun would that be?!
Okay, I promised I would keep this one short – so here’s the recipe lovelies, and I hope you enjoy!
Mini Waffle Breakfast Sandwiches
Makes: approx, 12 mini waffles {6 sandwiches}
Things you need…
Mini Buttermilk Waffles
2 tbsp butter, melted + extra to grease your waffle iron
1 cup buttermilk
1 egg, separated
3/4 tsp vanilla
1 cup all purpose flour
2 tbsp granulated sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
pinch of salt
Sandwich Fixin’s…6 Poached Eggs6 Poached Eggs
6 slices cooked thick cut bacon
6 poached eggs
6 slices Brie Cheese
Maple syrup as needed
Sweet Caramelized Onions
1 large yellow onion, sliced
2 tbsp butter
2 tbsp brown sugar
salt & pepper to taste
How to make…
Mini Buttermilk Waffles
In a bowl, whisk together melted butter, egg yolk, buttermilk, vanilla and whisk until smooth.
In a separate bowl, whisk together flour, sugar, baking soda, baking powder and salt. Pour in the wet ingredients and gently whisk together until just combined.
In a separate bowl, beat the egg white with a handheld mixer until soft peaks form. Gently fold the whipped egg whites into the waffle batter with a spatula until evenly combined.
Set the batter in the refrigerator for about a half hour before cooking. Meanwhile, caramelize your onions, poach your eggs, and cook your bacon.
Preheat your oven to 200 degrees and line a baking sheet with parchment paper.
Preheat your waffle iron and lightly grease the grid. Spoon about 1 1/2 to 2 tbsp of batter onto the center of each iron grid {depending on how large you want your sandwiches} and close the lid. Cook the waffles until they are golden brown {about 4-5 minutes}.
Transfer the cooked waffles to the prepared baking sheet and set in the oven to keep warm while you finish cooking the rest of the waffle batter.
Caramelized Onions
Place the butter in a skillet over medium heat to melt. Add the onions and stir them to coat with the butter. Sprinkle with the brown sugar and salt and pepper to taste. Continue to cook your onions over medium heat, stirring occasionally {every 5-10 minutes} to ensure even cooking. It should take about 30 minutes for them to fully caramelize to a nice golden brown colour.
Once your onions have reached your desired caramelization, remove them from the heat and set aside.
Sandwich Assembly
To assemble each sandwich; Take two mini waffles to act as the “bun” of the breakfast sandwich. Lightly drizzle each half with the maple syrup, and spoon some caramelized onions onto one of the waffles.
Cut each strip of bacon in half so that they fit the mini sandwich and place each half side by side on top of one of the onions. Place a poached egg on top of the bacon slices, and top the egg off with a slice of the brie cheese. Place the other mini waffle on top to complete the sandwich.
Drizzle with additional maple syrup {if desired} and repeat process for all 6 sandwiches. Serve immediately.
