Confession; my favourite part about Easter is the Cadbury Mini Eggs…..Well okay, if I’m being really honest, my real favourite thin about Easter is the Easter egg hunts, and hunting for said Mini Eggs.
Yes you read that right. I love Easter egg hunts. I know what you want to ask me… “Wait, aren’t you an adult woman?” Yes I am. “And you still want to participate in Easter Egg hunts?” My god yes.
Given the opportunity I would probably participate in an Easter egg hunt every year for the rest of my adult life… and It would be the most joyous occasion of each year…
Okay now I’m curious… am I alone here? Where are my fellow adult Easter egg hunt lovers at?
I don’t know if it was the fact that my parents always put together the most awesome Easter egg hunts for us kids or what, but my brothers and I were alllll about the Easter egg hunts. I’m not even exaggerating the slightest bit when I tell you that we made our parents put them on for us well into our late teens – and when I say late teens I mean I was nineteen…. aka, the latest teen you could possibly be.
Are you laughing at me yet? No exaggeration though – every year after were all over the age of 14 my mom would come to us and be like… “So you guys are probably not into the Easter egg hunt thing anymore, right?” And we would all just look at her with a look of childish horror like she just informed us that the Easter Bunny isn’t actually real. The poor woman was clearly tired of putting on the whole Easter egg hunt show for her four fully grown children, but we just couldn’t let the childish game go.
Yes, we were terrible. My mom was an angel. The end.
Eventually us kids started to leave our parents nest and sadly our annual Easter hunts finally became a thing of the past. Every year since I moved out of my parents house I have missed them, but for some reason this year I’m finding myself missing them even more so. I think it’s a combination of being deprived of Easter egg hunts for so long, mixing with my feelings of nostalgia for the childhood home where all of our said Easter egg hunts were held.
My parents recently sold their house and this year will be the first family Easter dinner I have ever known that is not going to be taking place in our childhood home. What can I say? I’m kinda feeling a little bit mushy about it. But it’s okay because today is actually the day that my parents are moving into their brand new house, and I’m so excited for them to finally get moved in and build new memories there…

Mini eggs were hands down the hero of those Easter egg hunts. I sought them out. They were my prey. Just the thought of those little nuggets of milk chocolatey heaven makes me want to start drooling… but I won’t.
There is just something so amazing, {and dangerously addicting}, about Cadbury Mini Eggs. Once I open up a bag, I can’t help but inhale every last one in what feels like a matter of seconds. There is simply no stopping me once I’ve got a taste for mini eggs.
Needless to say, I take getting my yearly intake of mini eggs at Easter very seriously. So this year I decided it might be fun to get my fix in a somewhat different fashion. Case in point… these Mini Egg Cookies. Oh yes….
I simply used my all-time favourite recipe for chocolate chip cookie recipe and swapped out the chocolate chips for Cadbury Mini Eggs instead. The result…. possibly my new favourite cookie of all time.
These cookies are super chewy in the centre, with perfectly crisp outer edges and are packed with subtle flavour punches from the vanilla and cinnamon. These simple little add-ins really do wonders to take your average cookie to a whole new level, and they pair up magically with the mini eggs.
Honestly, once you take a bite out of one of these and get that incredible cookie flavour with the goodness of the mini eggs….. game over. So here is the recipe lovelies just in time for your Easter weekend <3 <3
Chewy Mini Egg Cookies
Things you need…
1 cup butter, softened (I always use salted)
1 1/2 cups dark brown sugar, packed
1/2 cup granulated sugar
1 egg
1 1/2 tsp vanilla
2 1/4 cups all purpose flour
1 tsp baking soda
1 tsp baking powder
1 tsp cornstarch
1/4 tsp cinnamon
1/4 tsp salt
1 heaping cup Cadbury Mini Eggs
1/2 cup dark chocolate chunks
How to make…
Preheat your oven to 350 degrees, and line 2 baking sheets with parchment paper; set aside.
In the bowl of a stand mixer fitted with the paddle attachment, cream together butter and brown sugar until fluffy. Scrape down the sides of the bowl and add egg, beating until fluffy. Add in vanilla extract; beat until combined.
In a small bowl, whisk together flour, baking soda, baking powder, cinnamon, corn starch and salt. Add in two additions to the wet ingredients, beating on low speed until completely combined. The batter may seem a bit soft, but don’t worry – this is what you want. Add in mini eggs and dark chocolate chunks and mix on low until evenly distributed.
Using a cookie scoop or two teaspoons, scoop your batter out into about 1 tbsp portions out onto your baking sheets leaving at least 1.5 to 2 inches between each cookie. I usually put no more than 12 onto each tray.
Bake for 10-12 minutes or until the edges are golden and tops beginning to crackle. Remove from oven and allow to cool for 5-10 minutes before digging in… that is if you can wait that long 😀

These sound absolutely perfect, just like an M&M cookie but *better* because it’s Cadbury. Not to mention the pastel colors just look so cute every time 🙂 Beautiful!!
