Okay you guys… this actually happened. A giant Strawberry Rhubarb Pop Tart… at first I wondered if I had gone too far, but then I remembered that there is no such thing as “too far” when it comes to matters of pie.
I don’t know about you guys, but I was obsessed with pop tarts as a kid. Mostly because my mom refused to buy them for us – and don’t we always just really want what we can’t have? – but also because let’s be real, they are kind of sweet and fruity bites of heaven.
As much as I love a classic pop tart, they are no match for a homemade version – especially when the fruity filling is Strawberry Rhubarb. I developed this recipe as part of my monthly contribution to the Tastes of Lizzy T website and you can find the recipe on the here!
