I’m a big fan of a good biscuit…
Like I’m talking a good buttery biscuit, with a crispy golden crust yet a soft, fluffy, flaky interior… Maybe throw in some cheese, a bit of spice…
Yeah… big fan.
It’s been cold AF here in Vancouver (and when I say cold AF, I mean for us wimpy Vancouver folk) LOL
And when I’m cold I get all the comfort food cravings. Like my body thinks as long as I eat all the carbs, I will somehow become less cold… Don’t think that’s accurate, but it’s what I tell myself.
Anyhoo, I had a hankering for biscuits. And cheese. And Everything Bagel Spice… and so these biscuits were born.
These biscuits really are just like a big hug on a chilly winter morning. I love to use half whole wheat flour in my biscuits and add a touch of cornmeal to the dough, because I find it adds so much delicious flavour!
Seriously cannot wait for you guys to give them a try!
And oh yeah, just to be clear… there is a lot of butter and cheese in these, and it’s amazing. I have no regrets. You’re welcome.

Cheddar & Everything Bagel Spice Biscuits
Things you need…
1 1/2 cups all purpose flour
1 cup whole wheat flour
2 tbsp cornmeal
2 tbsp brown sugar
1 tbsp baking powder
1 tsp baking soda
2/3 cup butter, cubed
1 cup buttermilk
2 cups cheddar cheese, grated & divided
1/2 tsp salt
1-2 tbsp everything but the bagel spice (I use Trader Joes)
How to make…
Preheat oven to 375 F degrees is you are using a convection oven and 400F degrees if you are using a standard oven. Line a baking sheet with parchment paper; set aside.
In a large mixing bowl, whisk together all purpose flour, whole wheat flour, cornmeal, brown sugar, baking powder, baking soda and salt. Add in the cold cubed butter and gently toss to coat all the pieces in the flour mixture. Using a pastry cutter or your fingers, work the butter into the dry ingredients until pea sized bits remain. Add in 1 cup of the grated cheddar cheese gently toss to evenly distribute.
Drizzle the buttermilk over the dry ingredients. Use a spatula to gently toss the wet ingredients with the dry until a ragged dough forms. Turn dough out onto a lightly floured work surface and fold the dough over on itself 4-5 times to create those flaky biscuit layers.
Roll or pat the dough out to 1 inch thick square & use a knife to slice the dough into 9 equal squares.
Sprinkle 1/2 cup of the remaining cheddar cheese onto your partchment lined baking sheet in the shape of a square.
Place biscuits on top of the cheese (this will form the cheese skirt as the biscuits bake) brush the tops with melted butter & sprinkle with everything bagel spice.
Bake for 18 minutes, remove from oven and sprinkle the tops with remaining 1/2 cup of cheese. Place back in the oven and continue to bake for another 5-6 minutes or or until the biscuits are golden brown in colour.
Remove from oven and allow to cool for a few minutes before serving.

I dont have any whole wheat flour. Do you know if using all white flour will be okay?

Hi Kira,
You can use regular all purpose, but you might have to add a couple more tbsp of flour to compensate if the dough seems too wet.
