If it’s a brunch that looks fancy, tastes amazing, but is also wonderfully simple to whip up that you want, then you’ve come to the right place…
These breakfast pastry puffs are everything. Crispy ham, melty smoked gouda cheese, and a baked egg all atop a bed of flaky, buttery puff pastry… I mean honestly, does it get any better than that?
The best part is that they could not be more simple to make. All you need is a package of puff pastry and 10 minutes of prep time.

Crispy Ham, Smoked Gouda and Egg Pastry Puffs
makes 4 pastry puffs (you can easily double this recipe if needed)
Things you need…
1 sheet frozen puff pastry
4 large slices of ham
1/2 heaping cup smoked gouda cheese, shredded
4 tbsp mustard
1 large egg beaten (for egg wash)
freshly ground pepper, to taste
flaked sea salt, to taste
How to make…
Preheat oven to 400F and line a baking sheet with parchment paper.
Slice your sheet of puff pastry into 4 equal parts. Use a fork to poke holes in the center of each puff pastry square, leaving a 1 inch border around the edge.
Fold the slices of ham in half and place them in the center of each square to cover the holes. Sprinkle about 2 tbsp of shredded cheese on top of the ham. Brush the edges of the pastry with egg wash and sprinkle with flaked salt.
Place in the oven to bake for 12-15 minutes until the edges are golden, the cheese is starting to broil and the ham is crisp around the edges.
Remove from the oven and crack an egg on top of the cheese. Freshly grind some pepper on top and return to the oven to bake for an additional 10-13 minutes or until the egg is set.
Remove from the oven and enjoy warm.
