Small Batch Baked Brioche French Toast with Creme Anglaise & Blackberries
Things you need…
French Toast
1 cup whole milk
2 large Eggs
1 tbsp maple syrup
1 tsp pure vanilla extract
1/2 tsp cinnamon
pinch of nutmeg
1 tbsp melted butter
4 slices of brioche – 1 inch thick slices
Creme Anglaise
1/2 cup whipping cream
1/2 cup whole milk
3 egg yolks
2 tbsp sugar
1 tsp pure vanilla extract
1 tbsp maple syrup
To Serve

How to make…
French Toast
Preheat your oven to 375 degrees F and line one baking sheet with parchment paper.
In a large bowl or baking dish, whisk together eggs, milk, vanilla, maple syrup, melted butter and spices.
Dip the sliced bread into the mixture, and allow each piece to sit for 30 seconds on each side to absorb the flavour. Place each slice onto prepared baking sheets (6 per sheet) and set in the oven to bake for 25-30 minutes or until they are puffed and golden brown.
Creme Anglaise
While your french toast bakes, prepare your creme anglaise.
In a saucepan, mix together milk, whipping cream and 2 tbsp of the sugar. Set over medium heat and warm until just bubbling; remove from heat.
In a separate bowl, whisk together egg yolks and maple syrup. Add about 1/4 cup of the warm milk mixture to the egg yolks and whisk to combine. Add another 1/4 cup and whisk to combine. Pour egg mixture into the pot with the rest of the milk and return to medium low heat.
Cook the mixture for 3-5 more minutes while gently stirring constantly.
As it cooks, your creme anglaise will thicken slightly, but be careful not to overcook it as this could lead the mixture to break. A good way to tell if your creme anglaise is done is to submerge a wooden spoon into the pot and when it is thick enough for you to draw a line of the back of the coated spoon, then you know your creme anglaise is ready.
Pour your warm creme anglaise through a fine mesh sieve into a heat proof bowl. Stir in vanilla until combined. Place plastic wrap directly on top of the mixture and set in the fridge until ready to serve.
To Serve
Serve french toast warm from the oven with a dollop of prepared creme anglaise, a drizzle of maple syrup and fresh blackberries. Enjoy!
