We are officially in this Bomb AF baking series guys… like I am way too excited about it, and all I find myself day dreaming about is new ways to make boxed mixes amazing.
So next up… Boxed Brownies! This is going to be one of many boxed brownie write ups to come, because the possibilities are seriously endless with these bad boys…
First up in the Bomb AF boxed brownie baking series… salted caramel; homemade salted caramel (raises eyebrows)

How to make your Box Brownies Bomb AF: PT 1 Salted Caramel
- Swap the water they call for on the box with freshly brewed coffee. This is such a simple trick that makes a world of difference. You won’t even taste the coffee – it will just enhance the flavour of the chocolate and make your brownies all kinds of delicious.
- Swap the oil for butter because…. butter is just better. Enough said.
- Beat the butter and the egg with a wooden spoon until pale and thick. This is an extra step, but it will greatly improve your brownie texture.
- Add 1 tsp of pure vanilla extract. Pure vanilla is going to taste so much better than any artificial flavouring in your package mix. Do it up!
- Throw in some good quality dark chocolate or milk chocolate for that matter – whatever floats your boat. Just add more chocolate because that’s always a good rule of thumb.
- Stuff your brownies with homemade Salted Caramel Sauce. Spread half of the prepared brownie batter into your prepared baking pan. Pour about 1/2 to 3/4 cup of caramel on top and spread evenly across the first layer. Spread remaining brownie batter on top and put in the oven to baker according to package instructions.
Homemade Salted Caramel
** Note: This recipe makes about 1 cup of caramel – you will have extra
1 1/2 cups granulated sugar
2 tbsp corn syrup
1/3 cup water
1/4 cup salted butter, cold & cut into 1 inch cubes
2/3 cup whipping cream
1 tsp sea salt (optional)
In a heavy bottomed sauce pan add the sugar, corn syrup and the water. Stir to combine and set over medium high heat.
Bring to a rolling boil and allow it to bubble until the mixture reaches a light golden brown colour. Immediately remove from the heat and slowly pour the whipping cream into your caramelized sugar in a slow steady stream, stirring constantly with a wooden spoon as you pour it in.
Next add in your salt & butter and whisk until it has melted into the mixture.
