This is my idea of the perfect holiday cookie. Crisp on the outside, velvety soft and chewy on the inside, with a caramel, brown sugar flavour and subtle spice… there’s no limit to how many of these cookies I could consume if left unsupervized.
These bit sized cookies are the perfect treat to keep on your counter this season! They store super well because they are the kind of cookie that just gets better after a couple days. Paired with coffee, tea or a glass of eggnog, you will want to have these around for all of your cozy holiday enjoyment.
What makes these cookies next level amazing? Well there is a secret ingredient, and it’s brown butter.
Have you ever baked with brown butter? It’s magical. You basically can’t go wrong when it comes to brown butter. I feel that it elevates the flavour in any baked good, and these cookies are no exception.
Brown butter gives this incredible, toasty, nutty, caramely aroma to your baking… and I mean who doesn’t want that?

Chewy Brown Butter and Spice Cookies
Things you need…
1 package Hunter Browns Brown Butter Cubes (12 tbsp)
1/2 cup brown sugar, packed
1/2 cup granulated sugar
1/4 cup fancy molasses
1 large egg
2 tsp vanilla
2 1/4 cup all purpose flour
2 tsp cornstarch
2 tsp baking soda
1/4 tsp ginger
1/4 tsp nutmeg
1 tsp cinnamon
1/8 tsp cloves
1/2 tsp salt
1/2 cup granulated sugar (for rolling)
1/2 tsp nutmeg
1/2 tsp cinnamon
How to make…
Preheat your oven to 350 degrees (convection if possible) and line 2 cookie sheets with parchment paper; Set aside.
In a large bowl, beat together butter, granulated sugar and brown sugar with an electric mixer until pale and fluffy. Beat in eggs, molasses and vanilla until just combined.
In a separate bowl, whisk together flour, cornstarch, baking soda, ginger, nutmeg, cinnamon, cloves and salt. add in three stages to wet ingredients beating on low until well combined.
Spoon 1 tbsp of dough out onto prepared baking sheets, fitting 12 to a sheet. Roll dough balls in granulated sugar & spice mixture to completely coat and set back on the baking sheet.
Bake in preheated oven for 10-12 minutes or until tops are crackly, edges are golden and beginning to firm to the touch. Remove from oven and allow to cool for at least 10 minutes before serving.
