Are you a sweet or savoury breakfast person? If I’m being honest, most of my life has been spent reaching for the sweet side of the breakfast table. Waffles with butter and syrup were arguably my all time favourite; however in the last couple of years I have been much more inclined to savoury breakfast options.
But still I cannot deny my love for a good old fashioned waffle. So I’ve given my favourite breakfast food a savoury makeover with the help of some fresh fried Spring Creek Farm Quail Eggs.
Have you ever tried Quail Eggs? If your answer is no, I would absolutely encourage you to do so. They are delicious, nutritious, and undeniably beautiful to look at. It brightens my day to see them sitting in my fridge. I think what I love most about them is that they have a higher yolk to white ratio, making them all the more delicious.
So who’s ready to level up their waffle game with a savoury twist?
These crispy waffles have a wonderfully flavourful base from the fresh chives, cheddar and cornmeal, which pairs incredibly with fried Quail Eggs, crispy ham and a drizzle of honey or maple syrup. Savoury meets sweet. It’s the best of both worlds.
Cheddar Chive Cornbread Waffles with Crispy Ham, Fried Quail Eggs & Honey
Makes 4 large round waffles
Things you need…
1 1/2 cups All Purpose Flour
3/4 cup cornmeal
1 tbsp cornstarch
1 teaspoon kosher salt
1/ 2 teaspoon baking powder
1/ 2 teaspoon baking soda
1/4 tsp freshly ground black pepper
2 cups buttermilk
1 cup shredded cheddar cheese
1-2 tbsp honey
5 Spring Creek Quail Eggs
¼ cup unsalted butter, melted
2 tablespoons minced chives
1 tsp fresh rosemary, finely minced
Optional Toppings
Butter
Fried Spring Creek Quail Eggs
Fried ham
Drizzle of honey or maple syrup
How to make…
In a large bowl, whisk together flour, cornmeal, cornstarch, cheese, baking soda, baking powder, salt, pepper, chives and rosemary.
In a separate bowl, whisk together buttermilk, melted butter, honey and Spring Creek Quail Eggs until smooth.
Make a well in the center of the dried ingredients and pour the wet ingredients into the well. Use a spatula to fold the wet ingredients into the dry until smooth. Set batter aside to rest while your waffle maker heats up.
Cook your waffles according to the manufacturers instructions. I like to cook mine on the highest heat to ensure a crisp golden exterior.
While your waffles cook, fry slices of ham and additional quail eggs for topping.
Lightly butter your waffles, drizzle with honey or maple syrup and top with fried ham and quail eggs. Sprinkle with pepper, and chives.
