Okay so I know it’s not technically Summer… so it’s not really Ice Cream Sandwich weather buuutt… as far as I’m concerned Ice Cream sandwiches are a year round situation that we should all just always be on board with… ja’ feel?
A few days ago, I made Vanilla Baked Donuts 5 Ways on my Instagram Stories (saved tutorial is here) and one of the donuts was a simple – yet freaking delicious – Cinnamon Sugar Baked Donut.
Now as much as I love a good baked donut, I also kind of feel that they are the best when they are fresh… like I love them, but they kind of go stale fast – you know what I mean?
So when I had a couple left over the next day, I was looking for a way to elevate them beyond their slight stale-ness and I thought… “Stale Donut? Nothing a little ice cream and caramel sauce can’t fix.”
So before I knew it, there I was… with a donut ice cream sandwich staring me square in the face… Not going to lie, it may have been the happiest moment of my life, and I just want it to be yours too.

Cinnamon Sugar Donuts Ice Cream Sandwich
Things you need…
Baked Vanilla Donuts
1 3/4 cups all purpose flour
1/2 tsp baking soda
2 tsp baking powder
1 cup granulated sugar
pinch of nutmeg
1/2 tsp salt
1/3 cup butter, melted
1 cup buttermilk
2 eggs, room temp
2 tsp vanilla
Cinnamon Sugar Coating
1 cup granulated sugar
1 tbsp cinnamon
2 tbsp butter, melted
How to make…
Donuts
Preheat your oven to 375 degrees and lightly grease with butter. Set aside.
In a large bowl, whisk together flour, baking soda, baking powder, nutmeg, salt and granulated sugar.
Make a well in the center of the dry ingredients & set aside.
In another bowl, whisk together buttermilk, vanilla, and eggs until well combined. Slowly whisk in melted butter until combined.
Pour into the well of the dry ingredients and gently fold the wet ingredients into the dry until the dough has just come together – it is okay if there are still a few floury streaks.
Scoop batter into a piping bag and cut about a 1 inch opening off of your piping bag.
Pipe the batter into the donut pans filling about 1/2 of the way full.
Place your donuts in the oven to bake for about 9-10 minutes or until the edges are a light golden brown.
Remove from the oven and set on a wire rack to cool for a few minutes before turning them out on the wire rack to cool to room temperature.
Once your donuts are cool, whisk together the granulated sugar and cinnamon in a bowl.
Working with one donut at a time, brush the top lightly with melted butter, and toss in the cinnamon sugar mixture. Set aside and repeat this process with the remaining donuts.
To make a donut ice cream sandwich…
Slice a donut in half; Take a scoop of your favourite ice cream – in this case I just used vanilla; plop the ice cream on top of the bottom half; drizzle with caramel sauce; place the top of the donut on top and ENJOY!
