Happy Saturday peeps!
I’m so stoked your stopping by for the very first post in the new blog post series that I’m calling “Dressin’ up Oatmeal!” So this is Episode 1 in what I think will be a 6 part series … or possibly more… {really this is largely dependent on if anyone really cares about dressin’ up oatmeal…}.
So why am I calling these blog posts “episodes”? Well because Star Wars has episodes, and Star Wars is pretty epic to most people. {Confession: I have never actually seen any of the Star Wars episodes…. so I say “most people” because I really wouldn’t know… please don’t judge me to harshly… }
Anyways, I think oatmeal is pretty much the most epic breakfast ever; Therefore, in an effort to make this the most epic breakfast blog post series ever, {clearly I’m shooting for the stars here}, I will be calling each post an “episode”. Strange…. or genius…? {okay, let’s face it it’s just strange}
Alright, moving on…
So first of all – you guys all pretty much rock because you’re here to check out how you can dress up your boring old oatmeal. So not only are you totally awesome because you will you soon be eating a wicked delicious bowl oats, but you are double the awesome because it is so super healthy for you.
I’ll say it again… you clearly rock – and let’s face it you’re basically a genius because you know that eating healthy, doesn’t mean that you have to sacrifice deliciousness. Virtual high five!
Now if you are a returning reader, you are already extremely well aware of my love for oatmeal and granola, because I pretty much talk about it every chance I get. But if this is your first time stopping by the blog, allow me to introduce myself: My name is Kristie, and I am an oatmeal addict. You too?! Great I think we will be good friends 😀
So I’m going to keep this short and sweet, because I’m pretty sure you have better things to do with your Saturday than listen to me yammer on for hours 😀 So here you go lovelies…
Maple Blueberry & Banana Oatmeal Bowl
Makes: 2 Servings
Things you need…
1 cup Rolled oats or quick cooking oats
2 cups milk {or almond milk or coconut milk or water– whatever you prefer}
Pinch of salt
2 tbsp maple syrup
1/2 tsp vanilla
½ tsp cinnamon
Pinch of nutmeg
1/2 cup plain or vanilla greek yogurt, divided {I used vanilla because it’s what I had in the fridge}
½ cup blueberries, divided
1 banana, sliced and divided
Extra brown sugar for sprinkling {totally optional – but also totally delicious}
How to make…
So I’m going to give you a couple choices for how to make your oatmeal, because let’s face it … we all like choices.
Option #1 – Microwave {aka – the easy way, and the way I usually do it… no shame for nuking stuff in the microwave in this house}
Combine your oats, water and pinch of salt into a medium sized heat proof bowl and microwave your oatmeal on high for about 2 minutes. I typically stop to give my oatmeal a stir after about a minute and a half to make sure everything is cooking evenly, and then return it to the microwave for an additional 30 seconds if needed.
Option # 2 – Stove top {aka – the slightly harder way for all of you non-lazy people LOL}
In a medium saucepan, bring your milk {or liquid of choice} to a boil. Stir in oats and salt; reduce heat to a simmer and cook until smooth and creamy – about 5-8 minutes.
Once your oatmeal is cooked, stir in the maple syrup, cinnamon, nutmeg and vanilla until completely combined.
Next, divide your oatmeal into 2 separate serving bowls {making the one you will be eating a little bigger than the other if need be :D}
Spoon 1/4 cup of the greek yogurt into each of the bowls on top of the prepared oatmeal. Next sprinkle each bowl with 1/4 cup of blueberries and divide the banana slices among each bowl.
Finally, sprinkle with a bit of additional brown sugar {if desired}, grab a nice big spoon, sit your cute butt down, and DIG IN!
I apologize for the all-caps up there but I just get realllly over-excited when talking about eating oatmeal…. it happens.
