I’m having a love affair… and that love affair is with puff pastry.
Listen, I am all for making things as homemade as possible, but when it comes to puff pastry, I am of the opinion that store bought is just about the greatest invention ever.
Just make sure you read the label to see that it is an all butter puff pastry, and you are golden.
I think what I love the moist about puff pastry is that it allows you to bake decadent flaky pastries on a whim, and the things you can bake or cook with puff pastry is essentially limitless.
It’s so easy to let your imagination run wild. Today I’ll admit my imagination wasn’t really running wild… it was craving more of a simple classic.
Today, my hungry imagination led me here…. to homemade sausage rolls. It’s a good place to be… and I want you to be here too.
So here is a recipe for simple, but incredibly delicious sausage rolls.
My local butcher makes amazing sausage. So I used mild Italian pork sausages for my recipe, but you could use whatever your preference is. Spicy sausage would be amazing too.

Easy Homemade Sausage Rolls
MAKES 24 SAUSAGE ROLLS (YOU CAN EASILY DOUBLE THIS RECIPE IF NEEDED)
Things you need…
1 sheet frozen puff pastry
3 large sausages, I used mild Italian pork sausage from my butcher
1 large egg beaten (for egg wash)
sesame seeds
flaked sea salt, to taste
How to make…
Preheat oven to 400F and line a baking sheet with parchment paper.
Unroll your sheet of puff pastry onto a lightly floured work surface. Dust the pastry with flour and lightly roll the sheet to flatten. Slice your sheet of puff pastry into 3 equal rectangular parts.
Take your sausages, and gently remove the meat from the casings. Working one at a time, stretch each sausage lengthwise across one edge of the slice of puff pastry, stretching evenly to the ends. Now roll the edge of the pastry up and roll the meat up in the pastry like a log to encase it. Pinch the edges of the puff pastry together, and place the roll pinched side down onto the baking sheet. Slice the log into 8 equal rolls. Repeat this process with remaining sausages.
Brush the pastry tops and sides with egg wash and sprinkle with flaked salt and sesame seeds.
Place in the oven and bake for 20-22 minutes or until golden brown.
Remove from the oven and enjoy warm.
