So in my last post I confessed my addiction for everything and anything pumpkin spiced…. case in point; I am doing my second Pumpkin Spice post of the week. Ha! I told you I’m obsessed. Are you in fall pumpkin spice overload yet? I’m so sorry if Pumpkin Spice isn’t your thing, but I just couldn’t help myself. I have been testing out homemade granola recipes with a good fall theme for our upcoming markets, and this one was such a success I just had to share it with you.
I’ll keep this one short today, because I rambled on and on last time. So here is the gist peeps – this granola… it’s da’ bomb. Uhmm yeah – like seriously DA’ BOMB! I mean honestly, when you combine brown butter, maple syrup and warm spices with pecans and chunky oat clusters of deliciousness……… how can you possibly go wrong?? You just can’t.
So yeah… I fell like this granola requires no further explanation – here is the recipe, but please use it wisely because if you make too much you may find yourself in a similar situation as I, where I consumed a little to much of it for my own good….. and when I say “a little too much” I mean like the whole bowl…. Truth.
Don’t judge – this stuff is dangerous or as my friend Kelly would say “it’s the tits.” Haha – love that girl. Give this one a try and let me know what you think!
Extra Chunky Autumn Harvest Granola
Makes: about 10 cups of granola
Things you need…
3 cups large flake rolled oats
3 cups quick oats
2 cups unsweetened coconut, shredded
1/2 cup whole wheat flour
1/4 cup almond meal
1/4 cup flax seeds
1 cup pumpkin seeds
1 cup chopped pecans
1/2 cup chopped almonds
3/4 cup dried cranberries{or raisins}
1 cup dried apples, chopped
3 tsp vanilla
2 egg whites
1/2 cup pumpkin pure
3/4 cup butter, browned
1/3 cup brown sugar
1/3 cup maple syrup
1/3 cup honey
3 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ginger
1/4 tsp cloves
1/2 tsp salt
How to make…
Preheat oven to 275 degrees and line two baking sheets with parchment paper; set aside.
In a large mixing bowl, combine rolled oats, quick oats, coconut, whole wheat flour, almond meal, flax seeds, pumpkin seeds, pecans and almonds. Stir with a spatula or wooden spoon until everything is evenly distributed.
In a saucepan over medium – high heat, melt butter and let cook until golden brown and fragrant; remove from heat and stir in pumpkin puree, brown sugar, honey, maple syrup, vanilla, spices and salt. Pour wet ingredients over oat mixture and mix thoroughly to ensure everything is evenly coated.
Whisk egg whites until foamy and pour over granola mixture. Stir until everything is evenly coated.
Distribute granola mixture evenly into both prepared pans, pressing to the corners and compacting slightly. Bake in preheated oven for 40 minutes and then spin both pans around on your rack, and bake for an additional 15-10 minutes or until the granola is a light golden brown in colour and the granola feels dry to the touch.
Remove from oven, sprinkle the dried cranberries and apples on top and place on a rack to cool completely. Your granola will feel soft when you first take it out of the oven, but don’t worry – it will crisp up as it cools. Once completely cooled, break the granola apart into large chunks and store in an airtight container for up to 2 weeks.
So this recipe might look a little daunting because of all of the ingredients but I swear you can whip it up in 10 minutes. The combination of all of the flavours is really what makes this granola so addicting – so I swear it is well worth the lengthy ingredient list!
Oh! By the way – if you like your granola like super extra chunky and delicious like I do, then you will be loving this recipe even more. Pssst…psst the secret to super chunky granola is adding a small amount of whole wheat flour to your mixture….
Seriously this is the best secret ever! If you have battled in the past with granola that just won’t clump, {this has been my situation many a times} I promise you if you add a touch of whole wheat flour to your usual recipe, your granola will be clumping up in beautiful chunks of wonderfulness all over the place! But shhh… this is a secret :p. You know – People always tell me I need to stop sharing all my best secrets with you guys, but I just love you all to pieces and I want you all to share in my kitchen tricks.
