This fall I had the pleasure of working at a friends apple orchard for the season.
It was such a cozy, fun place to work for the fall, and they make the most amazing apple cider. So naturally on my last day I made sure I stocked up, because not only is it delicious on its own, but it also makes the most delicious addition to baked goods.
Case in point – this Apple Cider Cake.
What can I say? This cake is a dream…
The apple cider pairs perfectly with the subtle spice, and the maple glaze is literally just the icing on the cake.
And it just needs to be said that this cake dunked in your morning coffee or enjoyed with a smear of peanut butter, is absolute heaven.

Spiced Apple Cider Loaf
Things you need…
Apple Cider Loaf
1 3/4 cups all purpose flour
3/4 cup dark brown sugar, packed
1/4 cup granulated sugar
1/4 tsp nutmeg
1 tsp cinnamon
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp of salt
1/2 cup butter, melted (I always use salted butter)
2 eggs
3/4 cup apple cider
1/4 cup whole milk
1 tsp vanilla
Apple Cider Glaze
1 1/4 cup powdered sugar + more if needed
1 tbsp maple syrup
3 tbsp apple cider
a couple drops of vanilla extract
How to make…
Preheat your oven to 350F degrees. Butter and flour an 8 x 4 inch loaf pan
In a large bowl, whisk together the flour, spices, salt, baking powder and baking soda; set aside. In another bowl, stir together milk and apple cider; set aside.
In the bowl of a stand mixer fitted with the paddle attachment, cream together butter, brown sugar and granulated sugar until pale and fluffy – about 5 minutes.
Scrape down the sides of the bowl, and add eggs in one by one, creaming the mixture, and scraping down the bowl in between each addition. Add vanilla and beat on low until combined.
Add in 1/2 of the flour mixture and mix in low speed until just combined. Pour in apple cider and milk mixture, and mix in low until just combined. Add in final half of flour mixture and beat on low until the batter is smooth.
Scoop the batter into prepared loaf pan and use your spatula to spread to the corners of the pan. Sprinkle the top with 1 tbsp of granulated sugar and place in the oven to bake for 45-55 minutes, or until the center of the cake springs back to the touch or a knife inserted in the center comes out clean.
Remove from the oven and allow to cool for at least 30 minutes in the pan. Meanwhile, prepare your glaze.
For the glaze: Whisk together powdered sugar, apple cider maple syrup and vanilla until smooth. If your glaze is too thick, add a bit more apple cider. Alternatively, if your glaze is too thin, add in more powdered sugar 1 tbsp at a time until desired consistency is achieved.
Run a knife along the edges of the loaf pan and turn the loaf out onto a cooling rack. Drizzle the top with glaze. Allow the glaze to set for at least 10 minutes before slicing.
