Happy Monday everybody!!!
Now I know what you might be thinking… “there is no such thing as a happy Monday morning…” and believe me, there are definitely Monday mornings when I would not be able to argue with that statement. However, this particular Monday morning was pretty much the most fantastic Monday morning of all time. How is that possible you ask? Well all of the credit for this spectacular Monday morning is due to these chocolatey, boozy, moist, fluffy little donuts from Irish heaven.
That’s right – this is the kind of amazingness that happens when St. Patrick’s day and donuts collide! Yup… I started this St. Patrick’s Day Monday morning off right with these little bites of heaven, (despite the fact that they are laced with stout and baileys Irish cream,)… I’m sorry is it inappropriate to have beer and liqueur for breakfast??? Well, we will just ignore the inappropriateness of this situation for the time being it was possibly one of the best decisions I have ever made, ;P.
Muahaha! That is my evil laugh, and I think it is absolutely fitting for this St. Patrick’s Day themed donut situation. Seriously though – these donuts……….. I don’t even know – I am at a complete loss for words. Let’s just see if you can understand with a quick snapshot of the key ingredients; Chocolate, Guinness Beer, Espresso and Baileys Irish Cream…. yeah….
In a nutshell, they are spectacular and the absolute perfect St. Patrick’s day treat! Perhaps my favourite thing about these donuts is that they can really be enjoyed at any time of day. Personally, I had mine for breakfast alongside my morning coffee, which as you can see here I topped off with a very healthy serving of whipped cream and dark chocolate shavings. Am I taking starting the day off unhealthy to a whole new level? Maybe – but so what! I mean as far as i’m concerned… the fact that these donuts are baked and not deep fried basically makes them healthy… right? Kind of….
Ahhh screw healthy! It’s St. Patrick’s day! So put these donuts at the top of your list of things to do when you get home today, because these will make the ultimate St. Patrick’s Day dessert!
Baked Dark Chocolate Stout Donuts with Baileys Irish Cream Coffee Glaze
Makes 12 large donuts
Things you need…
Chocolate Stout Donuts
1 1/2 cup all purpose flour
2/3 cup cocoa powder
3/4 cup brown sugar
1 tsp baking soda
1 tsp baking powder
1/4 tsp cinnamon
2 tsp espresso powder
1/4 tsp salt
1/2 cup butter, melted
3/4 cup Guinness beer (or another stout)
3/4 cup buttermilk at room temp
2 eggs, room temp
2 tsp vanilla
Baileys Irish Cream Coffee Glaze
1 cup icing sugar
1 tbsp maple syrup
1 tbsp baileys irish cream
1 tbsp fresh brewed espresso
How to make…
Chocolate Stout Donuts
Preheat oven to 375 and grease 2 donut pans; set aside.
In a large mixing bowl, whisk together flour, cocoa powder, brown sugar, baking soda, baking powder, salt, espresso and cinnamon until combined. Make a well in the center of the dry ingredients and set aside.
In a small mixing bowl, whisk together melted butter, eggs and vanilla until combined. Mix in buttermilk and Guinness to combine. Pour wet ingredients into the dry ingredients well and fold together gently with a spatula until just combined.
Scoop the batter into a piping bag, and pipe the batter into the prepared donut pans, filling the holes just below the rim with the batter.
Bake for 8- 10 minutes or until the tops spring back to the touch. Place on a cooling rack and allow to cool in the pans for 10 minutes before turning them out and allowing them to cool completely before you glaze them.
Baileys Irish Cream Coffee Glaze
In a small mixing bowl, combine all ingredients until a sticky, thick but fluid glaze comes together. You may need to add additional milk to the glaze to make it more fluid. Place the glaze in the microwave for 15 seconds to warm and make it more fluid.
**Note: I like to warm my glaze as opposed to continuing to add milk to make it more fluid because it makes the donuts easy to glaze, but ensures that the glaze is still thick enough to coat the donuts nicely and will set up nice and crunchy on the donut **
Dunk the tops of the donuts into the glaze allowing any excess to drip back into the bowl. Set the donuts back on a rack to allow the glaze to harden.
The glaze should be set in about 30 minutes and then you are free to stop torturing yourself and enjoy!
There is honestly nothing else I have to say about these donuts… because I think the pictures, the chocolate and the Guinness alone speak for themselves. Honestly these are such a rich, moist, chocolatey, and boozy donut that will make your stomach oh so happy that you graced it with their presence. There is no need to feel guilty about eating them, because when something tastes this good… there is absolutely no judgement and no shame! Sure you may have to work out a little extra hard tomorrow morning… but it’s going to be worth it I promise you!
