Who’s ready for strawberry season!? I for one could not be more excited, so today I’m in the kitchen with California Strawberries (currently in peak season) finding that taste of Summer in a sweet and simple dessert you’ll want to make all summer long.
Let’s be honest, when the Summer heat sets in, it’s hard to justify turning on the oven, so simple no-bake desserts become my go to.
Juicy California Strawberries are the star of these simple Strawberry Waffle Cone Cheesecake parfaits. Layers of cheesecake mousse, plump California Strawberries, fluffy whipped cream and crispy waffle cone crumbles. This naturally sweet and delicious dessert is also an excellent source of Vitamin C. and if I had it my way, I would eat one of these for dessert every night.
This is that perfect combination of strawberries and cream. Sweet, nostalgic and so simple to make.. Whether your making them for a quick weeknight dessert or serving them at a family picnic, these parfaits are perfect for any occasion.
Strawberry Waffle Cone Cheesecake Parfaits
Makes 4 parfaits

Things you need…
Strawberry Sauce
2 cups California strawberries, hulled & sliced
2-3 tbsp granulated sugar
Cheesecake Layer
6 oz full fat cream cheese, softened
⅓ cup powdered sugar
1 tsp lemon zest
1/2 cup heavy whipping cream + 2 tsp sugar
1 tsp vanilla extract
Whipped Cream
¾ cup heavy whipping cream
1 tbsp powdered sugar
3-4 waffle cones, crushed
How to make…
Strawberry Sauce
In a bowl, stir together strawberry slices and sugar. Place in the refrigerator and allow to macerate for 1-2 hours.
Cheesecake Layer
In a medium bowl, use an electric boxer to beat softened full fat cream cheese until smooth and there are no lumps. Scrape down the sides of the bowl, add lemon zest and powdered sugar and beat until smooth.
In a separate bowl, use an electric mixer fitted with the whipping attachment and beat heavy whipping cream with sugar and vanilla until stiff peaks form.
Scoop half of the whipped cream mixture into the cream cheese mixture and use a spatula to gently fold the two together. Add remaining whipped cream and fold into the cream cheese mixture until smooth and evenly combined.
Assembly
Gather 4 medium sized cups or jars to use to assemble your parfaits. Scoop 2 tbsp of crushed waffle cone in the bottom of each jar. Next, spoon about 4 heaping tbsp of the cheesecake mixture on top of the waffle cone crumbles and use the spoon to spread to the edges of the jar. Next, spoon 2 tbsp of the macerated strawberries on top of the cheesecake layer. Next top with 2-3 more heaping tbsp of the cheesecake mixture.
Cover the tops of the jars and set in the fridge to chill for at least 1 hour – preferably 2 hours.
When you are ready to serve, prepare your whipped cream, by beating the heavy cream with the powdered sugar until soft peaks form.
Finally, top each jar with another couple scoops of macerated strawberries, and a dollop of whipped cream. Sprinkle with more waffle cone crumbles and place any larger waffle cone chunks in the side to decorate.
