I was recently asked if today was my last day on earth, what would I want my last meal to be?
For me the answer was simple. I knew immediately – but I was surprised when I took a lot of heat for my answer…
So what would I want my last meal to be?…
Pancakes.
Yup. Ya heard me. It would be pancakes, and I am sticking to that answer. As far as I’m concerned pancakes are good all day long. Like they are good for breakfast, but they are almost more amazing for dinner – ja feel me?
Also let me clarify that I’m not talking about any old pancake for my last meal here. No – I’m talking a legit stack of warm, fluffy AF, buttermilk pancakes. Topped with a healthy dose of melty butter and pure Canadian maple syrup…
I mean honestly, who doesn’t want that?
I’m not 100% sure why I was given so much guff over my choice, but I can only assume it’s because those who heckled me haven’t truly experienced a good homemade pancake…
Hence this blog post. An ode to homemade fluffy pancakes for those who may not have ever experienced them… Prepare to have your life changed.

Mom’s Fluffy Blueberry Buttermilk Pancakes
Things you need…
2 cups all purpose flour
3 tbsp granulated sugar
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/4 – 1/2 tsp cinnamon (depending on how much cinnamon love you have)
2 cups buttermilk
2 eggs separated
3 tbsp melted butter
1 1/2 tsp pure vanilla extract
Optional Add-ins: Fresh berries, apples, stone fruits, nuts, chocolate chips or whatever your heart desires.
Butter & Maple Syrup for topping
How to make…
In a large bowl, whisk together flour, sugar, baking soda, baking powder, and salt until combined.
Using a hand mixed, whip the egg whites until stiff peaks form; set aside.
In a separate bowl, whisk together buttermilk, egg yolks, melted butter and vanilla. Pour the wet ingredients over the dry and stir with a spatula until the batter is just starting to come together. Add the whipped egg whites and gently fold them into the batter until its just coming together. Fold in any extra additions – such as fresh berries, nuts or chocolate chips… etc.
Tip: Your batter does not need to be perfectly smooth – little lumps in your pancake batter are actually good.
Heat a buttered griddle or frying pan over medium heat. Pour or scoop the batter into the pan – approximately 1/4 cup for a smaller pancake or a whopping 1/2 cup for giant pancakes.
When your pancakes start to bubble on top, they are ready to flip. Brown the opposite side and serve em’ up!
Serve pancakes with butter, maple syrup, whipped cream, jam… anything your heart desires.
