It’s that time of the month again! Okay not that time of the month – but the time of the month where I partner up with Albion Fit to bring you a super tasty recipe!
This month we wanted to make something fit for Spring, and I don’t know about you, but when I think of Spring baking, my mind immediately goes to light, sweet and tart recipes often featuring one of my all time favourite ingredients; Lemons.
Swirled with Blueberries and topped with a sweet and tangy Lemon glaze – this loaf is pretty much my idea of everything. It is super moist, flavourful and just downright addictive. Not to mention, it can be easily doubled if you’re thinking just one loaf isn’t going to be enough… because I’ll be really honest with you, it probably isn’t. One of these loaves usually lasts no longer than a day in my house – consider yourself warned.

This was wonderful. I made a mistake of making the icing too thin but it was still delicious and everyone at work loved it.
The loaf is not too sweet but flavorful. I used frozen blueberries but I think it still works.
I would definitely make it again!!
