I’m on a puff pastry kick. Like, I can’t stress enough how much I love this stuff; Can’t stress enough how amazing it is.

Listen… I love me some homemade pie dough. Truly, when I have the time, there are few things that make me happier than massaging butter into flour, and slowly, carefully making a batch of flakey, buttery pie dough…
But let’s be real, we don’t always have the time for that – as much as we would like to.
Enter frozen puff pastry… AKA – my favourite way to do up a quick and easy cheater pie. At any given time, you will find my freezer stocked with a couple boxes of frozen puff pastry.
It’s a staple in my freezer – especially in the summer time, because if I find a bunch of fresh berries and have a spur of the moment hankering for a fresh fruit pie… frozen puff pastry always has my back.
If you ever find yourself in need of a super quick and easy dessert – but one that is sure to wow you, and potentially guests if need be… frozen puff pastry is the way to do it.
Frozen puff pastry and I got your back with this recipe. I swear it takes no more than 10 minutes to prepare, and then you throw it in the oven and just watch the magic happen while you chill, and I don’t know, maybe sip on a glass of rose, or beer or a cocktail… heck yes!
That’s right, chill the frig out, because when you pull this golden brown, flaky, buttery, fruity goodness out of the oven… well you’ve just achieved freaking hero status – No exaggeration necessary.

Giant Spiced Blueberry Puff Pastry Toaster Strudel
Things you need…
1 sheet pre-rolled frozen puff pastry dough, thawed
Blueberry Filling
2 heaping cups fresh blueberries
pinch of salt
1 tsp fresh orange zest
1/3 cup brown sugar, or more to taste if your blueberries aren’t very sweet
1 1/2 tbsp cornstarch
1/4 tsp of cinnamon (optional)
generous pinch of cardamom (optional)
Egg Wash
1 egg
1 tsp cream
pinch of sugar
1 tbsp coarse sugar for sprinkling
Orange Glaze
3/4 cup icing sugar
1-2 tbsp fresh orange juice {+ more if needed}
A few drops of vanilla
How to make…
Preheat your oven to 375F degrees and line a baking sheet with parchment paper.
In a small bowl, whisk together egg, cream and a pinch of sugar to make your egg wash. Set aside until ready to use.
In a bowl, gently mix together berries, brown sugar, orange zest, vanilla, cornstarch, cinnamon and cardamom.
Lightly flour a cool work surface, and lay out your thawed puff pastry sheet. usually just keep it on the parchment that it comes wrapped in. Use a rolling pin to flatten it out if necessary.
Use a pastry brush to lightly brush an inch around the edge of your puff pastry square (this will help to bind the edges together when you assemble your strudel.)
Spoon the filling onto half of the puff pastry square. Arrange the filling so that you have still left the 1 inch border around the edge of the pastry. You want to leave this 1 inch gap so that you have room to seal your puff pastry nice and tight.
Fold the empty half of the puff pastry square over top of the filling. Gently press the edges together with your fingers, and then seal them further using a fork all the way around to ensure they are closed nice and tight.
Once your strudel is assembled, gently lift the parchment and strudel onto your baking sheet. Set the strudel in the freezer for 15 minutes or so just so the dough can rest a bit before it hit the oven. **This step isn’t 100% necessary, but it just ensures a nice flakey puff pastry, and your hand pies will hold their shape a bit better too.
Once your puff pastry is chilled, remove it from the freezer and brush the top with the prepared egg wash. Sprinkle with coarse sugar and place in the center rack of your oven to bake for 30-35 minutes or until puffed and the pastry is a deep golden brown colour.
Remove from the oven and set on a rack to cool while you make your glaze.
Orange Glaze
In a small mixing bowl, whisk together icing sugar, orange juice and vanilla until smooth. If your glaze is a bit too thick, add a few more drops of water, or if it is too thin, add a couple more tbsp of icing sugar.
Use a spoon to drizzle the glaze over your warm strudels. Serve warm or completely cool.
